Black pepper | 2 pinches |
Olives | 4-5 pcs. |
Butter | 40 g |
Capers | 1 handful |
Chilli | 1/3 pcs |
Garlic | 3 cloves |
Step cooking
- Turn on the oven to warm up to 250 degrees. Pour 100 ml of water into a baking sheet, cover it with parchment paper. We wash three large bell peppers, put on a baking sheet and send to the preheated oven for 15-20 minutes. Then put in a plate and cover with a deep bowl on top so that air does not pass. Leave on demand.
- Cut the catfish fillet into small squares without removing the skin from it, and send it into a deep bowl. Thanks to the skin, the meat will retain its shape during cooking.
- Fresh ginger root, literally 5-7 grams, is peeled, chopped very finely or grated and sent to the chopped catfish fillet. Here we pour 50 g of dry white wine and 20 ml of red wine vinegar. Sprinkle with a pinch of cane sugar, salt, ground pepper to taste, mix well. The catfish must be salted 10 minutes before cooking, otherwise it will lose all its moisture, and as a result it will be tasteless. Therefore, if you plan to leave it to marinate for a long time, you need to add salt just before cooking.
- Now we clean the head of red onion, cut it into half rings. We put the pan on the fire, send 40 g of butter and chopped onion to it. We cut into rings the white part of the leek and also send it to the pan.
- We wash a bunch of onion greens, cut into large pieces only its green part, put on a plate and leave it for now. The taste saturation for the confiture will be three minced cloves of garlic, four green seedless olives, cut in half, a small handful of capers and 3-4 minipiri peppers or ⅓ part of chili pepper. We mix all these ingredients together in one bowl.
- When the onion is fried to a dark golden color, add 150 g of cane sugar and 50-70 ml of hot boiling water to it, mix. Fry until caramelized sugar, add pre-prepared foods for taste saturation, and chopped green onions. Mix everything, make a small fire and simmer for another 5 minutes.
- Two large red onions are cleaned, washed, cut into 4 parts. On skewers we put onions quarters and pieces of fish, alternating with each other.
- We put the wire rack on the baking sheet, put the skewers with kebab on it and put it in the oven. Bake at a temperature of 280 degrees for 10-12 minutes.
- Remove the peel from the baked pepper, remove the stalk and seeds. Cut the pepper into strips, put it on a plate. Cover it with confiture on top. After the kebab from the catfish in the oven is ready, put the skewer with meat on top of the confiture, and we can serve it to the table.
