Ingredients
- Wheat flour - 2 kg

- Pickled meat - 350 g

- Soy Sauce - 10 g

Step cooking
- Pour 500 grams of clean water at room temperature into a bowl and add 30 grams of salt to it. Pour 2 kilograms of premium wheat flour into a larger bowl and add 3 chicken eggs. In parts, add water to a bowl with flour and knead the dough on noodles. We put the finished dough into a bag or wrap it in cling film and leave it in a warm place for 1-1.5 hours. We roll out all the dough into a thin layer, with a thickness of not more than 1 centimeter. On the one hand, grease the rolled seam with vegetable oil. Fold it in half and again grease the upper part with vegetable oil.
- We cut the whole dough into strips about 1.5 centimeters wide. We put all the sliced noodles in a bag again and leave for 1 hour at room temperature. When the necessary time has passed, we roll each strip of dough into thin noodles.
- We coat the whole long noodles with vegetable oil and cut into small noodles, 7 centimeters long.
- Pour water into the pan, salt and put on the stove. When the water boils, dip all the noodles into it, mix and cook until it starts to boil again. Then we cook for another 1 minute, take it out with the help of a slotted spoon and dip it in clean cold water for literally 5 seconds.
- Peel 2 heads of garlic, chop and pour boiling water. We clean 1 ginger root, cut into pieces and also pour boiling water. Wash, peel and cut in half rings 2 onions. We clear 3 bell peppers from seeds and cut into large cubes. Cut into slices 200 grams of Beijing cabbage.
- Pour a lot of vegetable oil in a saucepan or in a pan with sides.
- When it is heated, put 350 grams of pickled meat in it and fry for 3-4 minutes. Add the Beijing cabbage, fry for half a minute and put the pepper. We fry it for a minute and remove everything from the fire.
- Pour a little oil into the pan and put the onions. Fry for 1 minute and add 15 grams of garlic with water, and 20 grams of lapis.
- Add 15 grams of tomato paste and 10 grams of water with ginger. Mix everything, simmer for half a minute.
- We return the meat with vegetables to the pan, mix and add salt to taste, 10 grams of paprika, 15 grams of wheat vinegar, 10 grams of soy sauce and 10 grams of Sichuan pepper seeds.
- Add 10 grams of green celery, mix and fill with 100 grams of water and 10 grams of small. We transfer everything from the pan to a separate container, and again pour the vegetable oil into the pan. When it is heated, put our noodles and fry for 2 minutes.
- Add a little onion, fry for half a minute and remove from the stove.
- Pour 20 grams of lapis into the pan, add the fried noodles and meat with vegetables. Mix everything, sprinkle with celery greens and transfer to plates.
