Ingredients
- Fresh tomatoes - 2-3 pcs.
- Chicken eggs - 6 pcs.
- Bell pepper - 2 pcs.
- Onions - 2-3 pcs.
- Salt to taste
- Ground black pepper - to taste
- Vegetable oil - 1 tbsp. l
Step cooking
- I wash all the vegetables well under running water and dry with a towel. Peel the onion and finely chop.
- We clear the bell pepper from the seeds and cut into thin rings or half rings.
- In tomatoes, remove the core and cut into small cubes. If desired, you can pre-sprinkle them with boiling water and remove the skin.
- Break the eggs into a bowl and beat with a whisk.
- We put the pan on the fire, pour the vegetable oil.
- First of all, put the onions in a heated frying pan. Salt and fry a little. Add pepper to the onion, mix. Fry for 5 minutes.
- Add tomatoes to the pan and mix.
- Cover and simmer vegetables until soft. In total, it takes about 20 minutes.
- After that, pour the egg mass into the pan, distribute them evenly and pour all the vegetables. Salt and pepper to taste.
- Spread the layers of vegetables with a spoon for better penetration of eggs. Cover and simmer another 5-8 minutes until tender. Put the finished omelet with tomatoes and pepper on plates and serve.
