Step cooking
Preparing the filling
- Rinse 500-600 g of apples and dry them with a paper towel.
- Cut the apples in half and peel the cores. If the peel of the apples is hard and dense, it can be removed.
- Dice the peeled apples.
Kneading dough
- Pour 300 ml of warm water (36-37º C) into a deep bowl. Add 1 tsp to water. salt, 2 tbsp. l sugar and 1 tbsp. l dry yeast. Stir until completely dissolved.
- Measure out 5 tbsp. l vegetable oil and pour into a bowl. Take 500 g of premium wheat flour and sift it through a sieve. The sifted flour is saturated with oxygen, and the dough from it becomes more airy. Add flour to the bowl to the rest of the ingredients and knead a uniform dough.
- Use a spoon for kneading, and when the dough has gathered in a lump, continue to knead it with your hands for 10 minutes. The dough should become elastic and not stick to your hands. Do not add excess flour, so as not to clog the dough.
- Cover the bowl with the dough with cling film and put it in a warm place so that the dough fits well. The rise time of the dough depends on the quality of the yeast and the temperature at which the dough is suitable.
Sculpting pies
- When the dough increases at least 2 times, you can start cutting it. Lubricate any prepared work surface and hands with any vegetable oil (1-2 tbsp. L.). Place the dough from a bowl on a greased work surface. The dough must be kneaded, giving it the shape of a ball. Divide the dough into 16-20 identical parts.
- Turn each part with your hands into a cake. Put about 1 tbsp. l toppings and 1 tsp. sugar for every tortilla. Gently pat the pies and immediately start frying until the filling has started the juice.
Frying pies
- Prepare the deep fat. To do this, pour a sufficient amount of oil into a large deep pan. You will need approximately 500 ml of any vegetable oil. It should cover 2/3 of the height of the pies.
- Heat the fryer over medium heat. The required temperature of the frying oil is easy to check with a small piece of dough. It must be placed in deep fat, while the dough should immediately float, and the oil should hiss.
- Once the deep fat is warmed to the desired temperature, put the pies in it. Do not put a large number of pies into the pan immediately, they should be free to deep-fried. Fry each pie from all sides until golden brown. After frying, put the finished patties in a container covered with a paper towel. After it absorbs excess oil, pies can be laid out on a serving plate.
Let the pies cool down a bit and serve. The best companion for sweet and crispy cakes will be a cup of flavored tea. Have a nice tea party!
