Step cooking
- To prepare the dough in a deep container, mix four cups of pre-sifted flour, ten grams of dry yeast, three teaspoons of sugar, half a teaspoon of salt, and mix. To the dry mass add six tablespoons of sunflower oil and one cup of kefir. Knead the dough thoroughly. It should turn out homogeneous, smooth, elastic, but dense enough.
- After kneading the dough, lay it on the bottom of the bowl and cover with cling film or a towel. Leave the dough to rise at room temperature until it doubles in size.
- Boil homemade hard boiled eggs for the filling. The amount depends on how many toppings you like to put in pies. Cool them, peel and chop finely.
- Rinse the herbs in cold water, drain and chop finely. The amount of greens may also vary depending on your preference. Dill is usually used, but you can also add green onions or parsley, and mix it all with eggs. The filling may be different, but you must consider several nuances. Firstly, the pies are cooked very quickly, so the filling should be ready. If you put, for example, raw meat, then it certainly will not have time to cook. Also be careful with fresh vegetables. If, for example, you add fresh mushrooms or tomatoes, they will definitely let the juice in, and the pies will just stick up. Therefore, it is better to pre-fry vegetables, and meat - boil and finely chop.
- When the dough comes up, form a sausage out of it and cut it into pieces. If you like big pies, make slices a little bigger, or vice versa. The main thing is that they be the same size.
- Five minutes later, the sliced pieces will begin to rise a little more, and this is normal. Pour some flour onto the surface, take a rolling pin and roll them out in a thin layer.
- On the center, put one tablespoon of the filling, close the edges like dumplings, and then tuck the seam.
- Pour the sunflower oil into the pan so that it covers the entire bottom. But you do not need to use too much oil. Place the pan on a large fire and wait for the oil to heat well. When it becomes hot, make the fire quieter and lay out the pies. Do not lay them tightly, as they will increase in size during cooking. Enough five minutes on each side, so that they are covered with a golden crust and fully cooked. I advise you to lay a plate with disposable paper towels and put hot cakes on them so that the excess fat stack does not prevent you from enjoying the dish.
