Ingredients
- Fresh cucumbers - 4-5 pcs.
- Carrots - 1 pc.
- Garlic - 2 cloves
- Ginger –2 cm slice
- Chives - 1 root
- Cilantro - to taste
- Ground coriander - 1/2 tsp.
- Dried chilli - 1 tsp.
- Salt to taste
- Sugar - 2 tbsp. l
- Starch –2 tsp with a slide
- Light soy sauce - 3 tbsp. l
- Dark soy sauce - 1 tbsp. l
- Oyster sauce - 1 tbsp. l
- Vinegar 6-9% - 1 tbsp. l
- Vegetable oil - 5 tbsp. l
- Water - 100 ml
Step cooking
- All products must first be prepared. For the dish you will need 4-5 fresh cucumbers, which must be thoroughly washed and dried. On both sides, we cut the tails and cut the cucumbers into medium sized pieces.
- Peel the carrots and also cut coarsely. Optionally, carrots can not be added. It is necessary only to give the finished dish brightness.
- For the dish you need 1 root of green onion. Separately, finely chop first the white root of the onion, then chop the greens. A ginger root of approximately 2 cm should also be finely chopped. In the dish to taste, add cilantro, which is finely chopped. A pair of garlic cloves are peeled and cut into small pieces. If desired, garlic can be passed through a press.
- Attacks for the preparation of sweet and sour sauce. To do this, send in a deep plate 2 tbsp. l sugar, 1 tbsp. l vinegar 6-9%, 3 tbsp. l light soy sauce and 1 tbsp. l dark soy sauce. Also, for the preparation of sauce used 1 tbsp. l oyster sauce, 1/2 tsp ground coriander, 100 ml of ordinary cold water and 2 tsp. with a slide of starch. All the ingredients for the sauce are thoroughly mixed until smooth.
- For cooking, you will need a thick-walled pan or wok. Pour 5 tbsp. l vegetable oil and put the pan on the stove to warm up.
- When a light smoke comes from the pan, slightly reduce the heat to medium and send chopped ginger, onion root and 1 tsp to the pan. chopped dried chili peppers. Fry everything for 1 minute, stirring regularly.
- After 1 minute, we send the chopped carrots to the pan and fry them all together for another minute, without reducing the fire. The carrots should be slightly soft.
- After the carrots, add cucumbers to the pan and make the fire maximum. Salt the cucumbers to taste and mix. Fry for 1-2 minutes until the cucumbers begin to change their color.
- After a couple of minutes, pour the prepared sauce into the pan. Before adding it must be re-mixed. Without reducing the heat, bring the sauce to a boil.
- When the sauce boils well and thickens a little, turn off the heat. We send chopped cilantro, garlic and green onions to the pan to the rest of the ingredients. Mix everything again. The fried cucumber appetizer is fully prepared. It turns out quite fragrant and tasty, while it goes well with rice or any other side dish.
