Ingredients
- Fresh champignons - 1 kg
- Onions, large - 2 pcs.
- Ground black pepper - 1 pinch
- Green dill - 15 g
- Salt - 2-4 tsp.
- Vegetable oil - 90-100 ml
- Drinking water - 3 l
Step cooking
- Peel 1 kg of mushrooms from the “skirts” (the flesh under the edge of the hats), if desired, clear the usual mushrooms from the skin on the hats. If you use royal mushrooms, they cannot be cleaned. Wash the mushrooms thoroughly under running water, cut off dark or damaged areas. Let the mushrooms dry. Cut large champignons into 4 parts, medium-sized mushrooms (about 3 cm in diameter) - into 2 parts, leave very small mushrooms (less than 2 cm) intact. Experienced chefs say that it is a large slicing of mushrooms that allows you to preserve their taste and aroma, and this is the method of grinding chosen for frying.
- Put a pot with 3 liters of drinking water on the fire, add 1.5-2 teaspoons of table salt. Pre-boiling allows you to get more juicy mushrooms when frying. Pour chopped mushrooms into boiling salted water, reduce heat to low, cook mushrooms for about 10 minutes.
- While the mushrooms are boiling, take onions. Peel 2 large heads of onions. Cut the onions into cubes or julienne of medium size. The method of cutting is not of fundamental importance, the main thing is that the taste of onions is felt in the mushrooms.
- Heat 50 ml of any odorless vegetable oil in a pan well. Pour the chopped onion into the pan, fry over low heat, stirring until slices are pleasantly golden (5-7 minutes).
- Discard the boiled mushrooms in a colander, wait for all the liquid to glass. Pour 40 ml of vegetable oil into the second pan, fry the mushrooms with occasional stirring for about 20-25 minutes. Season the dish with 1 pinch of black pepper, mix. Try the mushrooms for salt and pungency, if necessary, add the desired ingredient.
- Transfer the fried onions into a pan with mushrooms, mix well, reduce heat to a small one. Cook the dish for another 5-7 minutes under the lid. Finely chop the washed and dried dill greens (15 grams) in advance, pour the greens into the mushrooms, mix. Cover the pan with a lid, turn off the heat, then mushrooms for another 2-3 minutes.
Cooking options
Such mushrooms with fried, boiled potatoes or mashed potatoes are very tasty, although you can serve this dish with any other side dish - pasta, cereals, vegetables. Mushrooms fried with onions and dill - a hearty, tasty dish, very easy to prepare.
If you want to cook fried champignons with a milder and more delicate taste, add a few tablespoons of sour cream at the end of the preparation. The addition of spices and herbs makes the taste of the dish brighter and more saturated. For these purposes, take bay leaf, garlic, basil, tarragon, and other seasonings you like that are suitable for mushrooms.
