Ingredients
- Beef - 600 g
- Onions - 180 g
- Cilantro Greens - 1/2 bunch
- Potato - 1600 g
- Garlic - 1 pc.
- Sunflower oil - 3-4 tbsp. l
- Salt to taste
- Ground black pepper to taste
- Ground coriander - 1 pinch
- Water - 100 ml
Step cooking
- First, cut the beef into small pieces, simultaneously removing all unnecessary streaks and films. If you wish, you can use lean pork for this recipe.
- Next, put on a stove a deep pan and pour a little sunflower oil into it. Warm up.
- Put the chopped meat on a well-heated pan and fry over high heat until golden brown. Salt to taste. In the process of roasting meat will let the juices. Fry until all the liquid has evaporated. It is not necessary to cover with a lid.
- Then add water to the pan so that it completely covers the meat. Reduce the heat to a minimum, cover and simmer for about 40 minutes. If you use pork, you can stew a little less.
- While the meat is being stewed, peel the potatoes from the skin and fill it with cold water so that it does not darken.
- Also peel 1 large onion or 2 smaller ones. Cut the peeled onions into thin feathers, like pilaf. Peel the head of garlic from the husk, and cut each clove into thin slices.
- Peeled potatoes are cut into large slices, like potatoes in a rustic way.
- After the meat is properly stewed and browned again, pour the chopped potatoes into the pan, and add sunflower oil if necessary. Add a little salt, mix and cover. Fry over medium-high heat under a closed lid until the potatoes become soft. Then remove the lid and fry over high heat so that the potatoes are browned.
- Next, add chopped onions and garlic to the pan. Mix and fry over high heat until the onion is brown.
- Add a pinch of ground coriander and a little black pepper. If desired, you can use red ground pepper.
- We lay out the finished dish in portioned plates and sprinkle with finely chopped green cilantro or parsley. Enjoy your meal.
