- The main character of the dish is cauliflower - this is where you start preparing for cooking. This vegetable is well peeled from leaves and unnecessary elements and cut off all blackened areas. Rinse under cold water. Then carefully remove the leg so that the inflorescences themselves are not damaged. Using a knife, separate all the inflorescences. They should turn out beautiful on a leg. No need to make them very small, even if they are larger, they will turn out more tender and will have a magical look.
- Place a pot of plain water on the stove. Bring it to a boil. Pour 2 tsp into water. salt and 1 tsp. sugar (this is 2 liters of water). Sugar is added to enhance the taste of cauliflower.
- In boiling water, dip all the inflorescences and let them boil-boil for about 10 minutes.
- When they are ready, take out and lay the inflorescences on paper towels so that the glass is excess moisture.
- While cabbage is boiling, make a batter. To do this, first take two eggs and separate the proteins from the yolks. Set the yolks aside - they will not come in handy for this recipe. Beat the whites with a whisk or an ordinary fork, but not to the foam, but simply with the aim of mixing and getting rid of excess density and viscosity.
- Add half a teaspoon of salt and whisk a little more. Also at this moment it is worth adding black ground pepper, literally half a teaspoon. If you like a specific seasoning, you can add it.
- Wash greens (dill is best - it is finer), wash, let drain and chop finely. Pour it into a future batter. It is better to add greens to flour, otherwise it can take lumps. Mix very well.
- Pour to begin with 2 tbsp. l sifted wheat flour (you may need to add some more later) and knead the batter. It should be thick enough, like a dough for pancakes.
- Place a frying pan on the stove and turn on a moderate fire so that the dish does not burn during cooking. Put a piece of butter (30 g) in a pan and pour a little vegetable oil (20 ml). Wait for the oil to warm up.
- Hands take each inflorescence and dip in batter. Make sure they are completely covered with dough.
- Dip the slices in a pan and fry on all sides until golden.
- After roasting, put cauliflower on paper towels to stack excess fat.
- Beautifully lay out ready-made inflorescences on the dish, decorate with lettuce and other greens, and you can serve it to the table!
