Ingredients
- Green tomatoes - 2 kg
- Carrots - 400 g
- Garlic - 25 g
- Hot pepper - 2 pcs.
- Water - 4.5-5.5 L
- Salt - 50 g
- Sugar - 100 g
- Vinegar 9% - 150 ml
Step cooking
- Peel 400 g of carrots from the peel and grate it on a fine grater. Grated carrots are put in a small plate.
- To the grated carrots we send 2 pcs to the bowl. finely chopped hot pepper. If you don’t have one, then replace it with dried hot pepper in an amount of about 1/2 tsp. Mix carrots with pepper well. Through a garlic press we pass a few cloves. In total, 25 grams of garlic will be required for such an amount of tomatoes. Add it to a plate with carrots and pepper, re-mixing everything thoroughly. The filling is ready.
- We proceed to the preparation of tomatoes. An appetizer requires 2 kg of green tomatoes, which must first be washed under running water. With a sharp knife, we do not completely cut each tomato.
- In the resulting cut, carefully put about 1 tsp. spicy carrot filling. We stuff each tomato in the same way.
- Previously, it is worth sterilizing glass cans for seaming with a volume of 1 liter each. You can do this in the classical way by holding cans with lids for several minutes in boiling water, or sterilizing them in a microwave, which is much faster. In sterilized jars, spread the stuffed green tomatoes tightly.
- After all the banks are full, we proceed to the preparation of the marinade. In a saucepan, boil 1.5 liters of water.
- We send 50 g of salt and 100 g of sugar to the marinade water. We mix everything well and, making medium or maximum fire, wait until everything boils. Salt with sugar should completely dissolve. Pour 150 ml of vinegar 9% into boiling water. Mix everything and immediately turn off the fire. The resulting hot marinade pour stuffed tomatoes in jars.
- At the bottom of a large pan we put a dishcloth so that the jars do not crack. Pour about 3-4 liters of water and wait until it boils. Reduce the heat and put in a pan cans with tomatoes and marinade. In this way we cook the tomatoes over low heat for 10 minutes, closing the jars with lids.
- After 10 minutes, we take out each can from the pan one by one and close them tightly with the help of a seaming key. When all the cans are closed, turn them upside down, wrap them in a warm blanket and leave them to cool completely.
- Spicy green tomatoes are ready in Georgian. You can transfer the cans to the cellar or store at room temperature. The appetizer turns out to be very tasty, aromatic and rich, at the same time, it will be a great addition to any side dish or meat dishes.
