Ingredients
- Applesauce - 500 g
- Instant gelatin - 20 g
- Vegetable oil - for greasing a knife
- Ice - for a cold bath
- Powdered sugar - for sprinkling
Step cooking
- Take the applesauce and spread in a bowl. You can buy ready-made mashed potatoes for baby food, or you can cook it yourself.
- Pour in mashed half of instant gelatin. Mix well.
- Pour the rest of the gelatin and mix well again and leave for 10-15 minutes so that the gelatin has time to swell.
- After that, gently warm in a water bath so that the gelatin is completely dissolved, mix. Leave to cool to room temperature.
- We take form 21 by 21 cm and cover it with cling film. If you wish, you can take a form of any size.
- Pour ice into a larger bowl, put a bowl of mashed potatoes in it, making a cold bath. Instead of ice, you can use very cold water.
- Beat with a mixer apple puree with gelatin in a cold bath until the puree begins to thicken. Then it will be better to retain air bubbles that appear when whipping mashed potatoes. It turns out a light air mass. But at the same time, it is important not to overdo it so that the mashed potatoes do not cool and freeze in a bowl. But, if it happened, then it is recommended to slightly warm the mashed potatoes and beat again.
- Then put the mashed potatoes in a mold and level with a spatula. We put the mold in the refrigerator until the mashed potatoes completely harden.
- When the puree has frozen, take out the form from the refrigerator, put the contents of the form on a cutting board and cut into marshmallows. For a clean cut, the knife must be greased with vegetable oil.
- Put the finished marshmallows on a plate and sprinkle with powdered sugar. It must be taken into account that the powder can melt, and the marshmallow will “cry”. If you wish, you can not sprinkle anything. Enjoy your meal!
Cooking options
There are also other options for making sugarless marshmallows:
- You can use any other fruit or berry puree if desired.
- Instead of gelatin, in some recipes it is recommended to use agar-agar.
- Some cooks prefer to add cinnamon or vanillin to taste.
- You can add sweetener or stevia.
- In some recipes, chicken egg protein is added.
- You can add a little honey.
- Sometimes add a small amount of water.
