Step cooking
- Before salting 3 fresh-frozen herring, it is recommended to cut them, since in this way the fish will cook faster. First defrost the fish in the refrigerator.
- Engaged in cutting herring on the board using a sharp knife. Cut off the fish's head, cut the belly and get all the insides. If there is caviar or milk, then it is also possible to pickle them together with herring. Rinse the fish under running water. Using a knife, they scrape off the dark film inside the herring’s belly, as it will produce bitterness. Cut off all the fins and tail.
- A deep incision is made along the back of the fish, almost to the ridge. The tail is also trimmed on all sides.
- Hands carefully separate the fillet from the bone. If the fish is fresh, then it will be easy to separate, while not falling apart. The second fillet begins to separate from the tail, reaching the ridge of fish. The remaining large bones are removed from the herring. The herring fillets are washed again and go directly to the salting process. In a deep bowl pour 3 tbsp. l salt with a hill and 1, 5 tbsp. l Sahara. The ingredients are thoroughly mixed.
- Sprinkle the fish well on both sides with a mixture of salt and sugar. They are placed in a large tray with the back down. On top of each pair of herring fillets lay 2-3 bay leaves, sprinkled with a pinch of pepper peas and cloves. Manipulation is done with 2 pairs of remaining fillet. Caviar and milk are also pickled in salt and sugar, placed on top of fillets.
- Put the fish under oppression for 6 hours. As a press, you can use a plastic lid and a half-liter jar of water. Liquid is not required to add to the herring itself.
- After 6 hours, the herring is ready. Each fillet is washed under cold water. Make seasoning for herring. To do this, cut 1 onion into half rings and place in a deep bowl. Finely chop half a bunch of fresh dill. You can also use frozen greens. Add dill to the onion.
- Juice is squeezed out from 1/3 of the lemon, pouring them onion with dill. Add 1.5 tsp. sugar and a little salt. All ingredients are gently mixed using kitchen tongs. Leave the onions to marinate in lemon juice.
- Engaged in cutting herring fillet. It is cut into small pieces of 2-3 cm. Fish is laid out on a beautiful dish. Salted herring with pickled onions and dill is served.
