Cucumber preparation
- Cucumbers are best chosen without damage. We take the quantity at the rate of 500 g of medium-sized cucumbers per 1 liter jar. Under running water, wash my cucumbers. It is better to wash with a sponge, it well removes white deposits from cucumbers, and washes sand. We put the washed cucumbers in a basin and fill it with cold water. Leave in water for 1 - 2 hours, depending on when they were collected. Soak the cucumbers so that they are not only crunchy, but also so that the amount of liquid in the jar does not decrease, and the cucumbers are well stored completely in the marinade. If you do not soak the cucumbers, then they will absorb the marinade with which you will fill them.
- During this time, we prepare jars and lids: wash and sterilize.
Preparing to Roll Up
- All leaves of cherries, currants, horseradish are thoroughly washed with water. Dill umbrellas can be poured with boiling water, then they will reveal their aroma more. In each sterilized 1-liter jar we put 2 pcs. allspice, 3-4 peas of black pepper, 2 cloves of garlic. If the cloves of garlic are large, you can cut them lengthwise.
- Add 1 leaf of cherry, 2 leaves of currant.
- At the bottom of the can, put 1 dill umbrella, if you have a large one, then you can divide it into several parts and put in several cans.
- Cut the horseradish stalk (we will need it later), fold the horseradish leaf and put it on the bottom of the can.
- In washed cucumbers, we cut the tails on both sides and stack them in jars vertically as densely as possible to each other. Cut the horseradish cut into several pieces, insert it between vertically laid cucumbers. Spread the 2nd layer of cucumbers horizontally. If the cucumbers are large, they can be cut.
- We lay dill umbrellas on top of the cucumbers.
- Cut into small rings chili peppers and put 2-3 rings on a jar. You can adjust the sharpness to your liking.
- Top with a sheet of currant.
- On fire, bring the water in a pan to a boil. Pour boiling water over the cucumbers so that the water completely covers them. Such a fill is needed so that the cucumbers warm up faster. Cover the jar with a sterile iron lid and leave for 10 minutes.
- After a while, remove the iron lid and cover the jar with a capron lid with holes, drain the water into the pan. We put water on the fire, let it boil.
- With boiled water, pour the cucumbers again, leave for 10 minutes.
Marinade preparation
- We take water in proportion: 0.5 l of water per 1 liter jar. For 1 liter of water we take 1 tbsp. l salt and 2 tbsp. l Sahara.
- Boil the marinade until the sugar and salt are completely dissolved. Set aside the boiled marinade, let stand for 1 to 2 minutes, so that the donkey sediment appears after the salt is dissolved.
Cucumber rolling
- We completely drain the water from the cucumbers.
- Pour 1/3 tsp into each jar. citric acid.
- Immediately pour pure hot marinade into banks.You always need to have boiling water in stock, because if you haven’t calculated, and you didn’t have enough 2 tablespoons of water, you can add ordinary cool boiling water, and then your jar will be full.
- We cover the cans with an iron lid and roll up.
- Carefully turn the cans upside down and check the density of the lid so that water does not leak anywhere.
- We cover the jars with a blanket, and leave them upside down until they cool completely.
