Ingredients
- Tomatoes - 3-4 pcs.
- Eggplant - 1 pc.
- Zucchini - 1 pc.
- Leek - 1 pcs.
- Garlic - 3-5 cloves
- Thyme - 5-6 branches
- Rosemary - 5-6 branches
- Butter - as needed
- Olive oil to taste
- Salt to taste
- Black pepper to taste
Step cooking
- Cut 1 leek into thin half rings.
- As small as possible, chop 3-5 cloves of garlic.
- Cut 3-4 tomatoes into circles.
- Cut 1 zucchini into circles of the same thickness.
- We also cut 1 eggplant.
- Lubricate the baking dish with butter. At the bottom of the form, evenly distribute the leek and garlic, mixing them.
- Sprinkle with rosemary and thyme leaves on top.
- On the resulting green pillow we lay out circles of vegetables, alternating them, and trying to make it as beautiful as possible - eggplant, tomatoes, zucchini.
- We spread sprigs of rosemary and thyme between the vegetables.
- Season with salt and black pepper.
- Pour olive oil.
- We cover the form with foil and send it to the oven, heated to 180-190ºС for 50-60 minutes.
- Now remove the foil, and bake the dish for another 30-40 minutes.
Useful Tips
- When choosing vegetables for baking in the oven, try to take zucchini, eggplant, tomatoes of about the same diameter, this will look very impressive in the finished dish.
- If you are afraid that the eggplant will be bitter - soak it after slicing in salted water (for 1 liter of water - 1 tsp. Salt) for 10 minutes.
