Ingredients
- Smoked ham - 70 g
- Raw smoked sausage - 70 g
- Chicken Egg - 4 pcs.
- Vegetable oil (olive) - 2 tbsp. l
- Ground paprika - 1 tsp.
- Bulgarian pepper, color - 1 pc.
- Dill Greens - 1 bunch
- Baguette french - 1 loaf
- Riga bread - 6 slices
- Fresh greens (chives) - 1 bunch
- Smoked salmon - 100 g
- Lemon juice - with ½ citrus
- Lemon zest - 1 tsp.
- Cream Cheese - 300 g
- Salt, ground pepper - to taste
- Fresh eggplant - 2 pcs.
- Wheat flour - 100 g
- Vegetable oil - 3-4 tbsp. l
- Seasonings, spices - optional
- Tomatoes - 3 pcs.
- Garlic - 3 cloves
- Onions - ½ head
- Fresh basil greens - 1 bunch
Step cooking
Omelette tapas
- Dissolve 100 g of ham and sausage into small cubes. In the same way chop the colored (red or yellow) bell pepper.
- Preheat the pan with 2 tbsp. l vegetable oil over medium heat, and slightly fry finely chopped cubes of meat products. After the ham sausage is heated, add chopped pepper to the pan and add 1 tsp. paprika.
- Beat four chicken eggs in a cup with a mixer or using an ordinary fork. Pour the contents of the pan with beaten eggs.
- Prepare the omelette with salt, pepper, remove the flame under the pan to a minimum, cover the pan with a lid and bring the omelette to readiness.
- Put the finished omelet on a flat plate and cut into slices.
- In the same pan, fry the French baguette sliced in slices on both sides until golden brown.
- Put slices of omelet on fried bread and serve hot with beer, pouring finely chopped dill on it.
Cold salmon sandwich
- Trim six slices of Riga bread from crusts, giving them the appearance of a rectangle.
- Finely chop a bunch of green onions and place in a deep cup. With half a lemon, remove the zest with a fine grater, and squeeze the juice from the lemon. Mix the zest with chopped onion.
- Add 300 g of cream cheese, lemon juice, salt, pepper (to taste) to the contents of the cup, and mix everything thoroughly into a homogeneous mass.
- Grease each rectangular slice of bread with cheese.
- Dissolve 100 g of smoked salmon in thin slices. Place a piece of salmon on each sandwich.
- Grease the sandwiches with fish on top with the remaining cheese mass, sprinkle with chopped green onions.
- Put the sandwiches in the refrigerator for 10 minutes, then cut each in half and serve at the beer table.
Eggplant chips
- Dissolve two eggplants in very thin circles and add plenty of salt.
- Lay out the salted eggplant slices on a paper towel, cover with another towel layer and press down a little. Dried eggplant slices dried for 5-7 minutes under paper towels in flour (100 g of wheat flour is enough for 2 eggplants).
- Heat a frying pan with 2 tbsp. Over high heat. l vegetable oil. Fry the eggplant slices on both sides to a beautiful golden color.
- Put the finished eggplant chips on a paper towel to remove excess oil. Serve chips to the table with Salsa sauce.
Salsa Sauce
- Heat in a pan over medium heat 1-2 tbsp. l vegetable oil.
- Simultaneously fry finely chopped tomatoes, onions and garlic in hot oil for 10 minutes without removing the burner flame.
- Transfer the frying to a blender bowl, add leaves from a bunch of basil, salt and pepper to taste. Lightly grind (or rather mix) with a blender at low speed into a coarse-grained mass.
- Serve with eggplant chips.
