Step cooking
- First of all, it is necessary to prepare 1-1.5 kg of bell pepper. Rinse vegetables thoroughly under running water and put in a deep bowl. We make an incision near the tail of the pepper and gently pull the tail to get all the seeds as much as possible. Using a thin knife, we clean in the middle, cutting off white growths inside the pepper and removing the remaining seeds. Similarly, prepare each pepper.
- We prepare water in advance. Pour about 3 liters of water into a small pot and put on the stove to make it boil. In a glass jar with a volume of 3 l, we spread 4-5 peas of allspice, 5-6 peas of black pepper and 2 bay leaves. If desired, the number of spices can be reduced or increased.
- Put prepared bell peppers in a jar of spices. Stack them as tightly as possible to fit more vegetables. But do not crush the peppers, otherwise they may break.
- When the water boils, pour it in a jar of peppers in portions. This must be done carefully so that the boiling water falls on the pepper, and not on the jar. Thus, the probability that the bank will burst is much less. Pour the peppers with boiling water to the very top and close the jar with a lid for seaming. We cover the jar with a kitchen towel and leave it to stand for 15-20 minutes at room temperature.
- After 15-20 minutes, open the jar and pour all the water back into the pan. Add 100 g of sugar and 50 g of salt to the water in the pan. We put the liquid back on the stove over medium heat and wait for the water to boil. To make the water boil more quickly, it is recommended to cover the pan with a lid. When the water boils, we begin to gradually pour 80 ml of vinegar 9%. This must be done carefully and in small portions. After adding all the vinegar, bring the marinade to a boil over medium or high heat.
- Remove the boiled marinade from the stove and again pour it in a jar of peppers. This must be done slowly, trying to pour liquid on peppers.
- After adding the whole marinade, close the jar with a lid and roll it with a can opener. At the end, you can wrap a jar of peppers in a kitchen towel and leave it to cool completely. Harvesting peppers for the winter is completely ready. Having such a sunset, you can even cook delicious and fragrant stuffed peppers even in winter.
