Step cooking
You can harvest mushrooms for the winter according to this step-by-step recipe with a photo:
- We prepare cans, wash them well with soda and sterilize.
- We thoroughly wash fresh mushrooms, cut off the legs. If you want, you can don’t cut the legs and pickle the whole mushrooms.
- We put the pan on the fire, bring to a boil. Pour mushrooms and boil for 5 minutes. Then we drain the water. Usually boiled mushrooms reduce their mass. We put a pot of water for the marinade on the fire. When the water boils, dip the mushrooms in a pan and bring to a boil.
- When the mushrooms boil, remove the foam. Add salt, sugar, allspice, cloves and bay leaf. After 10 minutes, remove the bay leaf and throw it away.
- Stir and simmer for a little boil until cooked. It takes about 25-30 minutes. Ready mushrooms begin to settle from the surface to the bottom. Add vinegar, bring it to a boil again and turn off the heat. We lay out the mushrooms with the help of a slotted spoon in prepared cans on a coat hanger. Mushrooms will have to float freely in the marinade. Bring the remaining marinade to a boil and put currant leaves and dill umbrellas in it so that they boil.
- We lay out umbrellas and currant leaves in jars and boiling marinade pour mushrooms in jars. Banks need to twist so that air comes out, or knock on the table.
- Add the marinade to the edges of the jar and close the lids. Let the banks cool and put them in a cool place for storage. It is recommended to store mushrooms no more than one year.
Cooking options
There are other ways to harvest pickled mushrooms for the winter:
- If desired, garlic cloves are placed in jars.
- There are recipes in which mushrooms are prepared along with carrots, tomatoes, bell peppers and other vegetables.
- You can add onions, horseradish, ginger.
- You can change the proportions of the ingredients to your taste - make mushrooms more salty or sharp.
- Some recipes add a little cinnamon to the marinade.
- Mustard seeds can be added to spice up.
- Instead of vinegar, you can add citric acid.
