Step cooking
- We break six eggs and separate the yolks from the proteins. Squirrels are placed in a large deep bowl. Prepare a baking dish in advance. Take a round baking dish with high sides. We cut out a circle of parchment paper according to the diameter of the form, and also attach the paper to the sides. To keep it better, you can stick it on a piece of butter.
- Pour a little water into the pan and put it on the stove to boil. In a bowl we put 250 grams of cream cheese, 60 grams of butter and 100 grams of milk.
- We put the bowl in a water bath and mix the ingredients with a whisk until smooth. It is important that this mixture is only warmed up, but not cooked. Therefore, stir constantly.
- Remove the bowl from the water bath and leave to cool to room temperature. Then add the yolks one at a time and mix them with a whisk until a homogeneous mass is formed. Pour 15 grams of lemon juice and 7 grams of vanilla extract to the rest of the ingredients. Mix everything again.
- Sifted through a sieve 40 grams of corn starch and 40 grams of wheat flour. Mix again until smooth and leave for a while.
- In proteins, add 1 gram of vinegar 9%, a pinch of salt and beat until foam with a mixer.
- When the whites are whipped, pour 150 grams of granulated sugar into them with a trickle and continue to whisk until a thick, white, uniform foam is created. In parts, add whipped proteins to the remaining ingredients and gently knead so that lumps do not form and airiness is not lost.
- The resulting mass is poured into a baking dish and tapped a little with it to release the bubbles.
- We cover the larger baking dish with the sides of parchment paper, put the dough shape in it and pour a little hot water into the first. Preheat the oven to 160 degrees Celsius and carefully put the cheesecake in it.
- We bake for 30 minutes, reduce the temperature to 140 degrees Celsius and cook another 60 minutes. When the cheesecake is ready, turn off and open the oven so that it gets used to the temperature. Then we remove the form with water and again leave for fifteen minutes pastries in the oven.
- We take out the baked goods from the oven and leave it at room temperature for twenty minutes.
- And only after that we turn the form over and take out the cheesecake. We spread it on a beautiful dish, decorate to your taste, and you can serve it on the table.
