Ingredients
- cottage cheese 9% - 400 g
- yolks (medium) - 4 pcs.
- granulated sugar - 4 tbsp. l
- premium wheat flour - 350-400 g
- salt (small) - a pinch
- baking soda - ½ tsp.
Step cooking
- To prepare airy curd buns, you will need to mix 250 g of 9% cottage cheese, 4 yolks and 2 tbsp. l granulated sugar. Mix all ingredients thoroughly until smooth. To make it easier to work with the curd mass, grind the curd separately through a sieve or use a submersible blender, and after that add sugar with yolks.
- In a separate bowl, sift 350-400 g of premium wheat flour, a pinch of salt and ½ tsp. soda. In this case, you do not need to extinguish soda with vinegar. The amount of flour may vary slightly depending on the quality of the curd and the size of the yolks. Begin gradually mixing the dry ingredients with the curd, kneading the dough. Do not add all the flour at once, sprinkle as necessary, kneading the dough with your hands when it becomes thicker. Tight dough is better to move from a bowl to a table and knead it well.
- Ready dough should turn out to be quite tight, but not clogged with flour. Put it in a bag and put in the refrigerator for 1-1.5 hours.
- Now you can start preparing the filling for the buns. Mix 150 g of cottage cheese and 2 tbsp. l sugar, grind well or use a blender.
- After an hour and a half, remove the dough from the refrigerator, sprinkle a little flour on the table and roll out a 0.5 cm thick cake.
- Put the curd filling on ½ part of the cake, evenly distributing it (the second half should remain empty). Cover the cottage cheese portion with the empty portion, and then roll it into a roll.
- Cut the roll into small equal pieces 1-1.5 cm thick and lay them sideways on a baking sheet covered with parchment. Grease the tops of the buns with yolk.
- Preheat the oven to 180 degrees and remove the curd buns for 20-25 minutes until they are well browned. Remove the baked goods from the oven, let cool slightly. If desired, you can sprinkle the cooled bun with a small amount of powdered sugar.
