Ingredients
- Table vinegar, 9% - 2 stacks.
- Soy sauce - 0.5 stack.
- Prepared water - 530 ml
- Lemon juice - 1 tbsp. l
- Sugar - 4.5 tbsp. l
- Onion - 1 head
- Garlic - 2 cloves
- Mustard (grains) - 3 tbsp. l
- Clove - 1 tsp.
- Cardamom - 0.5 tsp.
- Pepper (peas) - 1 tsp.
- Ground pepper (red) - 0.5 tsp.
- Ground cinnamon - 0.5 tsp.
- Ground ginger - 1 tsp.
- Anchovy or hamsa - 1 pc.
- Curry - 0.5 tsp
- Salt - 3 tbsp. l
Step cooking
- The first thing to do is prepare onions (1 head). Peel it and rinse it in water. Garlic (2 cloves) also peel, rinse, rinse in water and chop coarsely.
- Pour water (400 ml) into the pan, add sugar (2 tbsp.) And mix well to dissolve completely.
- Put the peeled onion head in the prepared liquid and leave it for 30 minutes. This procedure will get rid of bitterness.
- Pour table vinegar (2 cups) into another small saucepan, add soy sauce (0.5 cups), prepared water (100 ml), lemon juice (1 tablespoon) and mix thoroughly.
- Then add sugar (4 tbsp.) And mix everything thoroughly again.
- Cut the prepared onion into a small dice.
- Take ordinary gauze, roll it 4 times to get a square 25 × 25 cm in size. Put chopped onion, garlic, mustard in the form of grains (3 tbsp.), Cloves (1 tsp.) And cardamom in the center of the gauze (0.5 tsp).
- Also put peppers in gauze in the form of peas (1 tsp), ground red pepper (0.5 tsp), ground cinnamon (0.5 tsp), ginger (1 tsp).
- Form a bag and fix the edges with a regular thread so that the seasoning does not crumble.
- Dip the bag into a previously prepared liquid, put on fire and bring to a boil. When the liquid with the bag boils, leave minimal heat and cook the sauce for 30 minutes.
- Peel the anchovy or hamsa (1 pc.), Finely chop and send to a saucepan with sauce.
- Also add Curry (0.5 tsp), salt (3 tbsp.) And water (30 ml) to it and mix well.
- Leave the sauce for a while so that it cools down a little, then pour it with the bag into a glass jar, cover and let it stand for 7 days, squeezing the bag every day and putting it back into the liquid. After a week, the sauce can be used to cook your favorite dishes.
