Step cooking
- First, prepare the dough. To do this, combine water, vinegar, egg and salt, mix well.
- In the sifted wheat flour, grate the butter on a coarse grater and rub in the crumbs with your hands.
- Pour the liquid ingredients into the flour mixture and quickly collect the dough in a bowl, send it to the refrigerator for at least 3 hours.
- If you do not have ready-made home-made dough on hand or you do not want to bother with it, then you can use the purchased yeast-free puff pastry. At night, the dough should be transferred from the freezer to the refrigerator so that it unfrozen naturally. The dough needs to be rolled out a little so that it is 2 mm thick.
- Any shape with a diameter of 5 cm is cut out from the dough circles for the base of the flocks. It can be any form: a glass, a glass.
- We spread the prepared bases on a baking sheet covered with baking paper.
- Then we make rings from half of the circles with a diameter of 5 cm. To do this, use any shape with a smaller diameter, such as a bottle cap. We lay out the prepared rings on the bases. If you want the volcano to be higher, you can make two rings.
- Gently make a fork with a few taps on the base so that the dough does not rise much during baking.
- Lubricate only the ring with yolk. The sides and bottom of the flounces do not need to be lubricated, otherwise the dough will not open and the layer will not be visible.
- Preheat the oven to 190 degrees and send the pan with the blanks for 10 - 15 minutes until golden brown. Cool ready-made flounces and use a fork, spoon or finger to slightly push the bottom.
- Vol au vents can be stuffed with anything: mushrooms, meat, pate, fruits and other fillings. This is a great base for new dishes. For filling these volovanov we use Philadelphia cheese and any red slightly salted fish. Fish can be replaced with red caviar. We put 1 tsp in each volovan. Philadelphia Cheese.
- And we’ll make roses out of fish. We cut the fish into thin slices, and then twist each slice with a roll and lay on cheese. If desired, you can decorate with dill branches or any other herbs to your taste. Ready-made flounces are served on a beautiful plate to the table. Enjoy your meal!
