Step cooking
Marinade preparation
- We will prepare the necessary ingredients and work surface. Cook the marinade. Pour 500 ml of cold water into the pan, put on fire and bring to a boil.
- In boiling water pour 1 tbsp. l salt, 7 tbsp. l sugar and pour in 80 ml of odorless vegetable oil. Mix well, bring to a boil and cook for 2 to 3 minutes.
- Then remove the pan from the heat and immediately pour in 6 tbsp. l vinegar 9%, mix, close the lid. The marinade is ready.
Peeling and slicing vegetables
- Next, prepare and chop the vegetables. We clean one large carrot, wash and rub on a coarse grater.
- We remove one sweet pepper from the seeds and cut into thin strips. Red pepper is best used as it is juicy and sweet. To give additional color, you can add half red and half yellow pepper to the salad.
Green pepper is not recommended in this recipe, as it is not sweet enough.
- Wash the cabbage and chop thin straws.
- In a deep bowl we combine chopped vegetables - cabbage, carrots and red pepper, mix well, more conveniently with our hands. Salad is ready for pickling.
Cooking Pickled Cabbage
- After preparing the marinade and slicing vegetables, we collect our dish. We will marinate the salad in jars. We take two cans - 1 liter and 0.5 liter, this is the volume of chopped vegetables, we put in them the prepared salad of vegetables to the top.
- Fill with cold marinade, close the lid and send to the refrigerator for 12 - 16 hours. You can add bay leaf, peppercorns, cloves or garlic to the jar.
- Ready pickled cabbage should be served by shifting from a jar to a salad bowl and decorating with any greens to your liking. The result is a ready-made salad already seasoned with vegetable oil.
- You can store pickled cabbage in the refrigerator for 2 to 3 weeks.
