Ingredients
- Fresh gooseberries - 10 kg
- Raisins - 210 g
- Sugar - 2.8 kg
- Pure water - 5.6 L
Step cooking
- Thoroughly rinse 10 kilograms of fresh gooseberries. About 6-7 liters of wine will be obtained from this amount. If you want to do more, you will need to increase the number of all components. So, for 1 liter of pure gooseberry juice you will need: 400 grams of granulated sugar, 30 grams of raisins and 800 grams of pure water.
- Next, we crush the whole gooseberry with a pusher for mashed potatoes and pour into large bottles for wine.
- To do this, take two 10 liter bottles and fill them equally with the composition that turned out.
- In a large saucepan, mix 2 kilograms of granulated sugar, 210 grams of raisins and 2 liters of water. Mix everything thoroughly and wait for the complete dissolution of sugar. If you want the process to be faster, then make the leaven in advance.
- Sourdough evenly pour raisins into bottles with crushed gooseberries.
- Add 1 liter of clean water to each bottle.
- We cover the bottles with an ordinary paper towel and fix it with an elastic band. We leave to roam for 3 days at a temperature of at least 20 degrees Celsius.
- Three days later, we separate the whole cake from the juice. We do this with the usual colander.
- Pour all the juice that has turned out evenly into the bottles and add 400 grams of granulated sugar.
- We add 1.3 liters of water to each bottle, set the shutter and leave to roam in a dark place at a temperature of 18-24 degrees Celsius for 21 days.
- Throughout the time, do not forget to make sure that the gates do not fly off, and how the fermentation of wine progresses.
- When the wine is ready, we express the liquid, pour it into bottles or jars and can taste and treat loved ones.
Decoration methods and serving options
- Such wine can even be preserved. If you have prepared a lot of drink, then it can turn sour over time. Therefore, it is better to preserve it, and then it will stand for at least three years.
- Also, if desired, you can add currants, grapes and other berries to the wine. But remember that in this case they will give the product their taste, color and aroma.
- Be sure to calculate the amount of sugar on the initial number of berries.
- Do not forget that the fermentation process must be monitored, otherwise the wine may not fade or even sour.
