Step cooking
- Heat 250 ml of milk on a stove to a temperature of 40 degrees. Pour it into a deep bowl, add 6 g of dry yeast, one tablespoon without a hill of sugar, stir, leave for 10 minutes. During this time, the yeast will dissolve and a yeast cap will appear.
- Mix the milk. Sift 2.5 cups flour into a separate bowl. Pour two glasses into milk, add ⅓ tsp. salt, two tablespoons with a hill of sugar, mix everything.
- Remove the spoon, add 40 g of margarine or butter at room temperature, cut into pieces. It is better to use high-quality butter or premium margarine for baking. Using your hands, add the margarine to the dough. We get a soft dough that sticks to your hands - this is how it should be. At this stage, sprinkle the dough with flour on top, cover with cling film and leave for an hour to make the dough fit. Pour half a glass of sifted flour onto the work surface. We spread the dough and knead a couple of minutes.
- After that, with our hands we form an oval layer from it and roll out a thin layer with a rolling pin. We turn the layer into a bundle and divide it into 12 equal parts.
- Cover the baking sheet with baking paper. From each part of the dough we form a ball and put it on a baking sheet. Squeeze the dough balls a little, giving them a flattened shape, cover with a clean kitchen towel and leave to rise. At this time, prepare the filling.
- Pour the cottage cheese into a deep bowl, add two tablespoons of sugar, 20 g sour cream, a packet of vanilla sugar or one gram of pure vanillin, one yolk to it, whisk everything with a blender. Cottage cheese can use any fat content. The main thing is that it should not be sour, fresh, have a pleasant aroma. We recommend using sour cream with a fat content of 20%.
- When the dough comes up, remove the towel. Using the bottom of the glass in the middle, make a recess on each cake. In this recess lay out the curd filling.
- In a small bowl, beat one chicken egg and use a silicone brush to lubricate the side of the cheesecakes. We send the pan to the middle level of the oven, heated to 180 degrees, bake for 25 minutes. After that, put it on a flat dish and serve.
