Step cooking
We start the dough
- Mix in a small cup of 1½ tsp. dry yeast and granulated sugar.
- Gradually fill the dry mixture with 50 ml of milk (you can take a little warm water in the same amount) and set aside until a foam appears on the yeast mass.
- Pour 130 ml of milk and 50 ml of filtered water into a large bowl. Then pour 4 tbsp. l vegetable oil. Drive three chicken eggs into the bowl and add a little salt.
- Here, add 4-5 Art. l granulated sugar, and mix well with a whisk until smooth. Pour 500 g of sifted wheat flour into the egg-milk mixture in parts, mixing well after each added portion.
- After the first portion of flour pour in the spread yeast, and continue to knead the dough (already with a spatula) throughout the process of adding flour.
- After making the entire amount of flour, the dough must be laid out on the work surface, pouring 100-150 g of flour under it, and continue to knead the dough manually. The dough should be soft, but not sticky.
- Lubricate the bottom of a deep bowl with vegetable oil, form a ball from the dough and put in a bowl. Cover the bowl with cling film and set aside for 20 minutes to make the dough fit.
Making curd mass
- Pass 600 g of cottage cheese through a strainer.
- In the curd add 2 tbsp. l granulated sugar and a pinch of salt. Send here a bag of vanilla sugar and beat a chicken egg. Stir the curd with sugar and egg until smooth.
We form and bake cheesecakes
- When the dough doubles in volume, it must be precipitated (slightly mixed), without removing from the bowl, and set aside for another 30 minutes. After half an hour, when the dough rises a second time, grease the baking sheet 1 tbsp. l vegetable oil and turn on the oven to heat. Put the dough from a bowl on a work surface, and divide into two equal parts. Divide each part into 6-8 pieces, and form a ball from each piece, turning the edges inward.
- Put all the balls on an oiled baking sheet at a great distance from each other. Sprinkle flour on the bottom of the glass cup and squeeze a depression in the bottom of the glass in each ball.
- Put the filling into the recesses, smooth and grease the edges of the cheesecake (only the dough) with yolk from one egg.
- Put the baking tray with cheesecakes in a warm place (near the preheating oven) so that they are left to spread for 7-10 minutes.
- Bake for 20-25 minutes at a temperature of 180 ° C.
