Step cooking
- Ready-made puff pastry can be bought at any supermarket, and, as a rule, it is sold frozen. For the recipe, you will need 500 g of the product, which must first be thawed at room temperature. While the puff pastry is thawing, we are preparing the filling for the cheesecakes. In a deep bowl, put 150 g of homemade fresh cottage cheese and add 2 tbsp. l sour cream. The latter can be taken of any fat content, but sour cream with 20% fat is used in this recipe.
- In a bowl with cottage cheese, send 2 tbsp. l Sahara. If you want to get a less sweet filling, then the amount of sugar can be reduced or, conversely, increased if you want to get more sweet cheesecakes.
- In a bowl with all the ingredients for the filling, put 1/2 tsp. vanilla and whole strawberries. It is recommended to use 100-150 g of fresh berries, which are already slightly softened.
- Grind all the ingredients in a bowl until smooth. This will require a hand blender. You should get a mass of homogeneous consistency.
- Sprinkle the table with a small amount of flour and lay on it thawed puff pastry. On top of it, you also need to crush a little flour. In total, it will take about 2-3 tbsp. l
- We cut the dough sheet lengthwise, then cut it into squares of about 8x8 cm. If there is a figured knife for the dough, then you should use it to get beautiful edges.
- Retreating a few centimeters from each edge of the square of the dough, we make triangular cuts using a kitchen knife. We shift one edge of the dough to one side, and the other to the opposite. It should be a kind of envelope. The edges of the dough can be greased with plain water so that they stick together more tightly.
- We shift the envelopes formed from the dough onto a baking sheet covered with parchment paper. It is most convenient to do this with a spatula. The remaining 150-200 g of fresh strawberries are cut into small pieces. In the pocket formed in the middle of the dough, spread 1 tbsp. l curd filling. Spread a few pieces of fresh strawberries on top.
- Separate the yolk from one chicken egg and shake it a little. Using a silicone brush, grease the dough.
- Preheat the oven to 180 degrees and set to bake cheesecakes for 20-25 minutes. We take ready cheesecakes with cottage cheese and strawberries from the oven and transfer to a beautiful dish. Sprinkle with powdered sugar in the amount of 1-2 tbsp. l It is more convenient to do this through a sieve. We serve aromatic and tasty pastries to guests for tea.
