Step cooking
- We take 300 g of cottage cheese and add 3 tbsp to it. l sugar and 3 tbsp. l sour cream. We thoroughly interrupt the whole mixture with a blender until smooth.
- Now we get 0.5 kg of dough, put it on a table, the surface of which is preliminarily sprinkled with flour. We roll out the dough into a layer, the thickness of which should be about 4 mm. Try to roll it in one direction so as not to damage the layers.
- Next, take a large cup or any other shape and push the same circles in the dough.
- Now, with the help of a cup or glass of a smaller diameter, we cut out a few more in the circles obtained. In total, you should have 6 solid circles and 6 circles with a center cut out.
- Take 1 egg and gently separate the yolk from the protein. We will need them to lubricate the cheesecakes.
- We take out a baking sheet and put parchment paper on it. Put 6 solid circles on top of the paper and grease them with egg white. On top of them we put circles with a center cut out. In the process of baking, egg white sticks together parts of the molds, and they will not break up. In the center of future cheesecakes, lay out 2 tbsp. l cottage cheese toppings. You do not need to use too much filling so that later it does not leak out of the mold.
- Grease each cheesecake along the edge with egg yolk. This will give the baking a rosy appearance.
- Now set the oven to heat up to 220 degrees. While the oven is warming up, puff pastry can be prepared from the rest of the dough, which we cut from the center of the cheesecake tins. To do this, grease the circles with the remaining protein and dip each cookie blank in sugar. Next, lay out the future cookies on parchment with cheesecakes.
- We send the pan to the oven and lower its temperature to 200 degrees. Bake cheesecakes for about 20 minutes until golden brown. Orient your oven and constantly monitor the readiness of baking.
