Step cooking
- In a separate bowl, melt 100 g of butter. This can be done in a water bath or in the microwave. It is not necessary to melt it completely to a liquid state, it is enough that it becomes a little soft. Transfer the melted butter into a deep bowl.
- Add 1 tsp to butter. salt and grind the ingredients.
- In a bowl with butter and salt, add 100-120 g of flour. Sifting it is not necessary. Repeatedly mix everything with a tablespoon.
- Pour 150 ml of boiling water into the resulting mixture. You can heat water in a kettle or on a stove in a saucepan. Mix all the ingredients until smooth. It is better to do this with a whisk so that as few lumps as possible remain.
- Pour 150 ml of mineral water into the liquid mixture, which will make the dough more magnificent.
- Drive 1 medium-sized chicken egg into a bowl and continue to beat until smooth. If it’s difficult to do with a whisk, you can use a mixer.
- Add another 500 g of flour to the resulting mixture and mix everything first with a whisk, then knead the dough with your hands. Control the amount of flour yourself, you may need more or less.
- It is better to add flour in portions. The finished dough should turn out quite steep, smooth and elastic.
- We shift the finished dough into a small pan, sprinkling on top with a small amount of flour. We cover the pan with the dough with a kitchen towel and let it rest for 30 minutes.
- At this time, we begin to prepare the filling. Peel and wash 4 large potatoes under running water. Rub them on a fine grater.
- The grated potatoes are transferred to a sieve and a little tossed to remove excess moisture from the vegetable. Fresh lard (70-80 g) finely chopped. If there is a skin on a piece of bacon, then we cut it off and do not add it to the filling.
- We put grated potatoes and chopped lard in a separate bowl. Season the ingredients with black pepper and mix well.
- Sprinkle a little table with flour and spread the dough. Roll it with a rolling pin to a thickness of 2-3 mm. Using a glass, cut out circles of the same size from the dough.
- Put about 1.5-2 tsp on each dough circle. potato filling and pinch each dumpling.
- Pour about 1 liter of water into a small pot and place it on the stove. Salt water 2 tsp. salt and wait until the water boils. In boiling water, put dumplings and cook until cooked for about 4-5 minutes. Periodically, dumplings should be stirred so that they do not stick to the bottom of the pan.
- We take out the dumplings with a slotted spoon from the water and put them on a beautiful plate. Serve with a small piece of butter and a spoonful of sour cream.
