- First you need to cook the dough. To do this, drive one chilled egg into a deep bowl, add 1 tsp to it. salt and beat with a whisk or fork until a light foam forms. To save time and effort, you can use a blender with a nozzle for whipping.
- Pour 200 ml of boiled warm water into the egg with a thin stream, mix.
- Sift 450 g of wheat flour to the water with the egg through a sieve in several stages, stirring constantly to prevent lumps from forming.
- Sprinkle a little flour onto the tabletop and lay the dough on the table to knead it with your hands. Kneading time varies between 5-7 minutes.
- Next, put the dough in a disposable bag and let it “rest” at room temperature for 30 minutes. At this time, you can begin to prepare the filling.
Filling
- Peel, wash, and chop the potatoes so that they are 450 g when peeled. Put it in a pan, fill it with water, and set it on a cooker. After the potatoes boil, add salt to taste and cook until tender.
- Peel and then chop 200 g of onions. Pour 1.5 tbsp into the pan. l vegetable oil and heat a little, then sprinkle onion and fry until golden brown.
- When the onion becomes golden, add another 40 g of butter to it, mix, let the butter melt, and then remove the pan from the heat.
- Drain all the water from the pot in which the potatoes were cooked, and grind the potatoes with a blender or crush.
- Add the fried onions to the mashed potatoes, then beat 1 raw egg and mix the filling.

- Now you can start sculpting dumplings. Sprinkle a little tabletop with flour, cut a small one from a large piece of dough and begin to roll it, and then use a glass or cup to cut out circles for future dumplings.
- In the prepared circles, put the onion and potato filling, lay it so that the dough can be properly connected.
- Then just blind the dumpling.
- Put the dumplings on a hard surface sprinkled with flour.
- Pour 1.5 liters of water into a wide saucepan and set it to boil. When the water boils, add 10 pcs. peppercorns, 2 pcs. bay leaf and 1 tsp. salt, then lay the dumplings. You need to cook them for 3-4 minutes over medium heat.
- Remove the dumplings into the plate with a slotted spoon and pour over melted butter.
- The dish is ready, and it can be served at the table. Dumplings go well with sour cream and herbs.
