Step cooking
- Sift 3 stacks into a deep bowl. wheat flour. Then add 1 tsp. salt (preferably fine).
- In a glass with boiling water, add 2-3 tbsp. l vegetable oil.
- Pour boiling water and butter into the flour in one sharp motion, and then mix quickly and thoroughly.
- When the dough is thick enough, you can place it on the table and knead it with your hands, it is also recommended to slightly beat the dough on the table so that the ingredients mix as quickly as possible.
- When you knead the elastic dough, put it in a plastic bag or pack it in a plastic wrap, and then leave it on the table at room temperature while you are preparing the filling.
- Take 500 g of peeled potatoes, wash, cut and put to cook in a small saucepan.
- While potatoes are boiling, peel and chop one onion, heat sunflower oil in a pan and send the onions to fry.
- When the onion becomes light golden, add sauerkraut to it and fry a little.
- When the potatoes are boiled, drain all the water from it and cease.
- Then add the fried cabbage and onions to it, mix thoroughly, salt and pepper to your liking. The filling should be juicy.
- Remove the dough from the bag and divide it into 3 equal parts, 2 of which put back in the bag so that they do not wind off. Now you can start sculpting dumplings. Roll up the sausage from the part that remains.
- Then divide into small pieces, which need a little roll in flour, crush and roll circles. If you are used to making dumplings in a different way, you can follow it.
- In the middle of the dough, place a little filling so that they are not dry, but not torn during cooking.
- Then fix the edges of the dumplings with a curly seam so that they hold tight. Lay the cobbled dumplings on a plate lightly sprinkled with flour.
- You need to cook the dumplings in a wide pan with a thick bottom, in slightly salted water. Dumplings should be lowered into water only when it boils, and cook for 5-7 minutes after boiling, stirring occasionally.
- While the dumplings are boiling, you can prepare the onion fill. To do this, heat in a pan 5-6 tbsp. l sunflower oil, and then send to it 1 finely chopped onion, fry the onion until golden brown.
- Remove the cooked dumplings with a slotted spoon into a deep bowl, and then pour them with oil and onion dressing. Serve this dish better freshly prepared.
