Step cooking
- Boil potatoes in the amount of 300 grams in their uniforms, wait until it cools down, peel them, pass through a meat grinder, set aside. Fresh mushrooms, mushrooms, peel, wash under running water, put them in a colander, let the water drain. When the moisture is completely gone, cut the mushrooms into small pieces. Add 50 ml of vegetable oil to the pan, fry the mushrooms. Two medium onions are peeled, washed under cold water with a tap, cut into quarters on a cutting board, and removed to the side. We send the pan to the stove, pour 100 ml of vegetable oil, heat almost to a boil, add the chopped onion and fry until golden, stirring constantly so that the onion does not burn. We remove the bow to the side.
- Now we combine the fried onions and mushrooms in one pan, mix, salt with two pinches of salt, add a couple of pinches of ground black pepper, simmer for 1-2 minutes on the stove. We use half of the fried onions, leave the other half in order to add them to the finished dumplings later.
- We take the container with the potatoes passed through the meat grinder, add the mushrooms and onions from the pan there, mix, we get the filling for the dumplings.
- Now knead the dumpling for the dumplings. Pour 300 grams of flour onto the table, make a small depression, pour a glass of hot salted water there, begin to knead the dough, gradually add the flour sifted through a sieve in advance.
- When the dough is kneaded, place it in a plastic bag and give 10-12 minutes to rest, so that the dough is spread and has a uniform consistency.
- After this time, we take out the dough from the bag, crush it well again, divide into two approximately equal parts.
- From one part we roll out a large round layer, with the culinary ring we form the same size cakes. Later, we do exactly the same with the second part of the test.
- With a dessert spoon, we put mushroom filling on the middle of each tortilla, put vegetable oil on the half of the tortilla’s edge with our finger, connect the edges very tightly - we form dumplings.
- We send a pot filled with half water to the fire, wait until it boils, put the dumplings there, cook for 5-7 minutes, remove it with a slotted spoon, put it in a separate container. Add the remaining onion frying to them, mix, serve for dinner.
