- To start, pour strawberries into cold water and leave for 1 minute. After that, rinse well and remove the stalks. It is not recommended to do this before washing, as strawberries are saturated with moisture and become watery. For jam, this is completely unnecessary.
- Next, we transfer the strawberries into a large pot or basin and sprinkle with sugar. Lay the berries in layers and pour each layer with sugar.
- Leave the strawberries in the pan for several hours at room temperature so that the berries let the juice go. You can check this if you tilt the saucepan. We put a pan with berries on a medium heat and start cooking jam. Using a spoon, dip the berries into the syrup. The resulting foam is recommended to be removed.
- So that the jam does not lose its beautiful color, and that the berries do not boil, bring the contents of the pan to a boil and immediately turn off the fire. Boil jam is not necessary. After we turn off the gas, remove the remaining foam and “bathe” the berries in syrup. Set the pot aside for 8-10 hours. After that, put it on the fire again and bring to a boil. So repeat 3-4 times. It is convenient to do this in the morning and evening. Boiled in the morning, left until evening. In the evening, they boiled again and left until the morning, etc. With this method, the strawberries remain intact, and the jam turns out to be beautiful red. If desired, nuts, citrus fruits, fruits or other berries can be added to this jam. But to preserve the original strawberry flavor and color, we make jam only from strawberries and sugar. We wash the cans well. Then we sterilize them together with the covers. In hot jars we put berries with syrup, leaving 5 mm to the edge, and close the lids with a seaming machine.
- After this, we turn the jars on the lids, wrap them in a warm blanket and leave them to cool completely. After that, we put it into storage in a dark, cool place.
- Hot syrup is liquid, but with time it thickens. If you want to get a very thick jam, then when cooking in a syrup with berries, you can add pectin or gelfix. It is good to serve such jam to the table with pancakes, pancakes, pancakes, you can soak biscuits.
- If the berries are very juicy and you get too much syrup, then you can separately close the strawberry syrup in jars, which can then be used to make desserts or cocktails.
