Ingredients
- pumpkin - 1 kg
- granulated sugar - 800 g
- lemon - 1 pc.
- orange - 1 pc.
Step cooking
- We clean juicy and ripe pumpkin from seeds and peel, and then cut into medium-sized cubes. We will need about 1 kg of chopped pumpkin.
- We send the pumpkin into a suitable pan, and then pour in the same 800 g of granulated sugar. We leave the ingredients in this form at room temperature overnight, so that the pumpkin starts the juice.
- Using a stiff brush, thoroughly wash one lemon and one orange, then wipe the citruses dry with paper towels. Remove the zest from the lemon with a fine grater, trying not to touch the white flesh, which can spoil the jam, giving it unnecessary bitterness. We cut the peel of the orange with a knife and also try to hook as little white pulp as possible.
- Add grated lemon peel and serpentine of orange peel to the pumpkin that has started up the juice.
- Cut the peeled orange in half and squeeze the juice of one of the halves. We filter the orange juice through a gauze filter or a small strainer, and then pour it into the pan to the rest of the ingredients.
- We send the pan with the contents to the weakest fire and bring the mixture to a boil.
- From the moment of boiling, boil the jam for 5 minutes, after which we allow it to cool to room temperature. The cooled mass is returned to the stove and boiled again. As soon as the jam begins to boil, reduce the heat to a minimum and boil the treat for half an hour, stirring occasionally.
- In the meantime, squeeze the juice from the peeled lemon, then filter it through a gauze filter. After half an hour, pour the lemon juice into a boiling mass and stir well.
- Boil the jam for another 5 minutes, then turn off the heat and take out the orange peel.
- We pour the sweet product into pre-sterilized jars and tightly cork them with lids. Store pumpkin jam in a cool place.
