Pitted peaches | 1 kg |

Step cooking
- Prepare 2 containers. Leave one of them empty, pour 350 ml of cold, clean water into the other. In a container with cold water, add 1.5 tsp. citric acid (so that peaches do not turn black).
- 1 kg of ripe but not soft peaches, place in an empty container. Boil 350-400 ml of water and pour peaches with boiling water, leave them in boiling water for 20 seconds.
- Drain and pour peaches with cold water and citric acid. Peel the peaches. Peel the peaches in half with a knife and remove the seeds. Cut each half of the peach into three pieces (you can cut any desired size).
- Transfer half the peeled and cut peaches to a container in which you will make jam. Divide 850 g of sugar into 2 parts. Pour the first layer of peaches with 1 part sugar, then sprinkle the remaining half of the peaches and sprinkle with sugar. Leave the peaches in sugar for 1 hour.
- Put the pot with peaches on a slow fire and cook until it boils, stirring occasionally. Remove the boiled jam from the stove and let it cool completely.
- Put the cold jam on a slow fire again and bring to a boil again. Immediately after boiling, remove the pan from the heat, allow to cool and set for the third time on the stove (also on minimum heat). While the jam is boiling, squeeze 1.5 tbsp. l lemon juice with lemon.
- When the jam begins to boil (the third time), add squeezed lemon juice there, mix and let it boil for 10 minutes.
- Prepare 2 jars for twisting jam of 0.5 l each: wash them and preheat in the oven at a temperature of 150 degrees, for 10 minutes (the jars must be put in a cold, still unheated oven), pour the lids with boiling water. Pour the finished jam into the hot jars, cover the jars with lids. Turn the jars of jam so that they stand on the lid, cover with a towel and leave to cool completely.
Did you know? Adding lemon juice allows the jam not to be sugared after a twist for the winter.
