Step cooking
- Before starting to make jam, thoroughly rinse 1 kg of tangerine under running water, because their peel will also be used. Then dry the tangerines with paper towels. Peel the tangerines and carefully remove the white veins. Fold the peel in a separate plate. Divide the slices and, if you have large tangerines with pits, cut each slice in half and remove the pits.
- Place the peeled tangerine slices in a pan in which you will prepare the jam. Then pour 600 g of sugar into the pan and mix everything thoroughly with a kitchen spatula, after which leave the tangerines to insist a little in sugar. You can adjust the amount of sugar depending on the sweetness of tangerine.
- Meanwhile, using a knife, remove the white part from the tangerine peel so that only the zest remains. Cut the peeled peels into small strips and place in a separate bowl. In a teapot, boil about 600-800 ml of water and pour boiling water on a tangerine straw, then leave to brew for 15 minutes. This is necessary in order to remove the bitterness from the tangerine peel.
- After 15 minutes, drain the water from the tangerine peels. During this time, tangerines have already given juice and sugar has melted. Put the tangerine peels in a pan and mix everything thoroughly with a spatula.
- Place the pot on a small fire. In this case, constantly stir the tangerines with a spatula until the sugar is completely dissolved. Bring the jam to a boil, then cook it for another 5 minutes and turn off the stove. Then cool the jam completely at room temperature. After this, repeat this procedure two more times - boil, cook for 5 minutes and completely cool.
- Sterilize the jars while the jam cools. From this amount of tangerine, almost two half-liter cans are obtained. To sterilize, place a metal sieve in a pot of water and place the cans upside down on top of it. Steam the jars with steam for 15 minutes, boil the lids in water. After that, place the jars on a clean kitchen towel without turning over. Pour the tangerine jam into dry, sterile jars with a ladle and close the jars with screw caps or use tin cans and close them with a sealed key. When the jam has cooled completely, store it in the refrigerator.
