Step cooking
Cooking the dough and baking cupcakes
- Turn on the oven 180 degrees to preheat. Sift flour (205 grams) into a bowl with baking powder (6-8 grams). Wash lemon, dry. On a fine grater, grate the zest with one lemon in a bowl with flour (the zest is only the upper yellow part).
- Add salt (a pinch) and mix well with a tablespoon or culinary spatula. Put softened butter at room temperature (120 grams) in a mixer bowl and pour sugar (140 grams). Grind the mixture until smooth and light in color. It will take 5-6 minutes.
- Beat in chicken eggs one at a time (3 pieces). As soon as one intervenes, add the following. After mixing one egg at a time, add vanilla extract (2 teaspoons).
- Add the dry ingredients mixed in a bowl (flour, baking powder, salt and zest) in portions. Pour 1/3 of the dry mixture from the bowl into the mixer bowl and pour half of all the prepared milk (65 ml).
- When the first part of the mixture intervenes, add another part of the dry mixture and pour in the remaining milk. Stir and sprinkle the remaining dry ingredients. For a long time, stir and beat the dough is not necessary. Just mix it until completely homogeneous.
- Arrange the dough in tins. Fill out the forms completely, but somewhere in 2/3 of the part, keep in mind that the dough will rise during baking. If you use only a reusable metal mold, then pre-lubricate it with oil. But it is much more convenient to use disposable paper molds in addition: since no oil is required, and the cupcakes look elegant and attractive.
- Send the baking tray with cupcakes into the oven preheated to 180 degrees for 18-20 minutes. As soon as the cupcakes are browned, check the readiness with a toothpick: stick it in the cupcake, and if it is clean and dry, then it's ready. Do not dry the cupcakes - this is also bad. Remove the finished muffins from the oven and let cool in a baking sheet. Remove the slightly cooled cupcakes from the metal mold and leave to cool completely.
We prepare a gentle creamy curd cream and decorate
- Whip very cold cream (100 ml) with vanilla extract (1 teaspoon) until creamy. Add creamy or curd cheese (300 grams) and powdered sugar (55-60 grams) to the mixer bowl and whisk the mixture until a homogeneous cream is found.
- Transfer the cream to a pastry bag and decorate the completely cooled cupcakes on top. The most beautiful hat of the cream on the cupcakes is obtained with the nozzle "Open Star".
- If desired, cupcakes can be decorated with fresh berries and mint leaves, sprigs of lavender, sprinkled with colorful beads, balls or marmalades. Decorate as your fantasy tells you. You can store cupcakes in the refrigerator, but not more than 2 days.
