Step cooking
- Duck the duck (2.5 kg) from the skeleton of feathers. Trim the excess parts: the extreme parts of the wings, the long part of the neck (you should try to trim it not too deep, in moderation). To clean the duck of excess internal fat, but without skin (the skin will be needed to cleave the duck with toothpicks, otherwise you will have to pull it too much). Rinse the duck well with cold running water and dry it with paper towels both outside and inside.
- Put the duck in a marinating bowl. For marinade we need garlic (4 cloves). Peel, wash and chop the garlic. You can skip it through the press. But before baking in the oven, it will need to be completely removed, and with garlic passed through the press it will be more difficult to do. Good salt to taste the duck on all sides (always inside too) and rub the salt with your hands. Then pepper with black pepper to taste the same on all sides and inside. And spread the pepper over the entire surface of the duck.
- And the last touch is to grate the duck with garlic both inside and out. Do not try to make incisions and stuff the duck with garlic. If you want your end result to be not only tasty, but also beautiful, then you just need to grate the garlic, as mentioned above. Put a bag on a bowl with a duck and send it to the refrigerator, so that it waits in the wings.
- 5 hours have passed. The duck was marinated. How much to pickle a duck, you can decide for yourself. In general, the longer the better. But if you do not have so much time, then a couple of hours will be enough. Remove the package from the duck and remove all the garlic, because we only need its flavor from garlic. Wash 3 medium apples. Remove cores and cut in half. You can cut apples into quarters. Lay apples in a duck. Closer to the neck, arrange apples cut into quarters, and halves can be placed closer to the edge. In this case, you need to look at how many apples fit so that the duck can then be covered with skin.
- Now you need to sew up or with the help of toothpicks to stab the tightened skin. Two toothpicks is enough for this.
- Set duck aside. A roasting pan for cooking this dish must be taken with a lid. Since it is supposed to bake a duck with potatoes, it is better to take a broiler. If you do not have a roasting pan, then the duck needs to be well wrapped in foil so that fat and juice do not leak anywhere.
- Put the duck in the center of the roasting pan, cover it and send it to the oven preheated to 200 degrees and hold it there for exactly an hour. Peel potatoes (10 pcs.), Wash and cut into large thick circles. If the potato is smaller, then it can simply be cut in half. Fold in a bowl. Salt the potatoes, and then optionally. You can add a little garlic, pepper, red paprika for color or rosemary. Here is an amateur. After this time, the duck needs to be removed in a separate dish, and the fat is poured into a small bowl.Put the duck back in the center of the roasting pan. Pour the potatoes with duck fat, which we drained. Then mix well and place in a roasting pan around the duck. Send to the oven already without a lid for about half an hour.
- During this time, prepare syrup for coating duck. Wash one orange. Cut in half and squeeze the juice from one half. Remove the bones from it, if suddenly they got there. Put a frying pan on the stove and pour honey (2-3 tablespoons) into it so that it melts and becomes completely liquid. When honey becomes liquid, add orange juice. Boil. Turn off the stove and put aside.
- Remove the duck from the oven. Syrup with a brush to coat the duck for the first time. Put in the oven for 15 minutes. After 15 minutes, remove the duck again and coat with sauce. Repeat this process until the duck and potatoes are finally cooked. It all depends on the size of the duck and how you cut the potatoes. Sometimes it’s enough to coat the duck only 2-3 times. And if the duck is very large, then you can do it 4-5 times. But even then in the intervals of not 15 minutes, but 10 minutes.
- When the duck and potatoes are ready and browned, put them on a dish and serve.
