Step cooking
Marinade preparation
- In a bowl to 1 tsp. hops-suneli add 1 tsp. coriander, 1 tsp ground black pepper, 1.5 tsp. salt. Mix everything dry.
- Rub the zest of 1 orange on a grater.
- Add it to the dry mixture. Squeeze juice with ½ orange.
Duck preparation
- We stuff garlic with duck. We make cuts with a sharp knife in 4 places: near the legs and wings, put one clove of garlic. We pierce the skin of a duck in several places, so it is better to be marinated and excess fat will melt.
- Rub the duck with marinade on all sides. We put the duck in the bag, wrap it. We leave to marinate in this form for 6 hours.
Roasting duck
- Cut 2 oranges into 4 parts. Inside the duck we put 8 quarters of orange. We tie the legs of the duck with a thread, connecting them.
- Put the duck in the baking sleeve. We tie the sleeve on both sides.
- Spread on a baking sheet. Bake for about 2 hours at a temperature of 200 degrees.
- For 15 to 20 minutes before being ready, cut the swollen sleeve so that when baking it turns out a golden crust. On the edges of the duck, you can put coarsely chopped potatoes on a baking sheet.
- Put again in the oven for 30 minutes until the potatoes are ready. We lay the finished duck on a beautiful dish, decorate around with slices of fresh orange and serve.
Useful Tips
- The skin of the bird is very oily, so it is not suitable for the preparation of dietary dishes.
- To reduce the calorie content of the finished dish, the skin is removed from the bird. The meat is pierced with a knife so that fat escapes during cooking.
- For the filling, you can take any fresh fruits and vegetables. The products are cut into small cubes or slices, mixed with spices and salt.
- If you will stuff with mushrooms with onions, then they must first be fried in vegetable oil, and if you stuff with buckwheat or rice, boil until half cooked.
- For flavor, the duck carcass is rubbed with spices, garlic or sauce.
- Marinade can be prepared from lemon juice, mayonnaise, honey, mustard, wine, soy sauce.
- The prepared duck is placed in a baking sleeve. The edges of the package are connected, and holes are made on the top for steam to escape.
- The bird is laid on a dish on lettuce leaves and served hot. The treat goes well with tomato sauce, as well as sour cream sauce.
- The dish is decorated with lemon slices, olives, fresh herbs and vegetables.
