Step cooking
- We cut the previously cleaned and washed cod into 2 parts and put the fish in a pan, pouring it with 1.5 l of water.
- We put it on a fire so that the water boils, and remove the foam.
- We put in a saucepan an unpeeled washed onion, a few twigs of dill tied with a thread, a little salt and cook over low heat for about 1 hour.
- We spread the fish on a separate plate, onions and dill must be discarded, strain the broth.
- We clear the fish fillet from the skin and bones and divide it into pieces.
- Peel the potatoes and cut into slices.
- Cut the leek into circles.
- Grind the remaining dill.
- We put the broth on the fire, and as soon as it boils, put in it pre-chopped potatoes and carrots, and cook for about 20 minutes, not forgetting to remove the newly formed foam.
- While the vegetables are boiling, pour the flour into a cup with cream and mix well to avoid lumps.
- Pour into the broth circles of leeks and cook for about 5 minutes.
- Pour the prepared cream with flour into the soup and bring it to a boil.
- Salt and pepper the soup to taste. White pepper is good in combination with fish, but black can also be used.
- Transfer the cod fillet into slices and dill into the soup, mix the soup and cook for another 5 minutes. Enjoy your meal!
Tips
- Serve the soup with black rye bread. Finnish cuisine is famous for a variety of rye bread, but black is preferred.
- Make sure that fish and vegetables are always fresh.
- For a thicker consistency of soup, you can add 1 cream cheese to it.
- If you use defrosted fish for cooking, then remember that you need to defrost it correctly. In about 5-6 hours, remove the fish from the freezer section and leave it on the bottom shelf of the refrigerator - the fish will thaw without loss and gradually.
- To enhance the taste of vegetables in the soup, they can be fried in any oil in a pan. You can take any oil: sesame, hemp, peanut.
