Kitchen appliances and utensils:
- a stove or hob;
- pan 2 pcs. 5 l;
- a tablespoon or slotted spoon;
- cutting board;
- kitchen knife;
- classic stack of 50 g;
- any plate or container for collecting foam from the broth;
- a piece of gauze 70x70 cm or a steel sieve with a fine mesh;
- deep dinner plates to serve the finished meal.
Ingredients
Salmon (trim, ridge with leftover meat, head, tail) | 400-500 g |
Onion (medium size) | 1 PC. |
Carrot | 1-2 pcs. |
Tomato (medium size) | 2-3 pcs. |
Potato (medium size) | 4-5 pcs. |
Bay leaf | 2-3 pcs. |
Black pepper peas | 8-10 pcs. |
Salt | taste |
Dill | taste |
Vodka | 50 g |
Step cooking
- We put the fish in a pan, pour about 3-4 liters of filtered water, put on a stove to cook the broth over medium heat.
- Add the peeled onions (1 pc.), Bay leaf (2-3 pcs.), Peppercorns (8-10 pcs.), Salt to taste in the broth.
- 2-3 pcs. cut out the stem growth zone of the tomato, pierce the tomatoes with a knife in several places so that juice stands out from them, add to the broth.
- Cut 1 pc. carrots across 2 equal parts and add one of them to the broth. If you have 2 pcs. carrots, then use two halves of 1 pc. root vegetable. After boiling the broth, remove the foam and reduce the heat to a quiet boil, cover the pan with a lid for 20-30 minutes.
- In the process of cooking the broth, we prepare the vegetables. The remaining carrots are cut into thin rings of 3-4 mm, potatoes in small cubes of 1.5-2 cm.
- After the broth is ready, we take out all the ingredients from the pan, filter the broth through 2-3 layers of cheesecloth (or sieve) into the second pan. We put the fish in a separate plate, and you no longer need cooked vegetables.
- We put the pan on the stove for boiling. Add the potatoes and carrots cut earlier to the broth, close the pan with a lid, cook until vegetables are cooked over low heat.
- When the vegetables are cooked, add to the broth the most important ingredient - 50 g of vodka. Cut and toss dill to the pan to taste, boil the broth for 2-3 minutes, turn off the heat. The ear is ready.
- We pour the fish soup into plates, in each portion we add the fish meat previously cleaned of bones. Enjoy your meal!
