Step cooking
- Thoroughly clean five to six small carcasses of fish from the scales, remove the insides and gills. Rinse under running water.
- Dice about 8 potatoes into small cubes. If it is large, take a smaller amount.
- Cut into small cubes one onion and one carrot.
- Boil 2-2.5 liters of water and pour in chopped potatoes, onions and carrots.
- Add a couple of bay leaves and a handful (about 50 grams) of wheat or millet.
- Cook until half-cooked potatoes, about 10 minutes. When the vegetables are almost ready, add fish to the broth.
- Also at this moment put in a pan 50 grams of butter. Salt, pepper the ear to taste.
- As soon as the fish ear boils well, remove the foam.
- Add chopped dill, parsley and green onions to the soup (1 bunch). Allow to boil for no more than 5-7 minutes, since prolonged cooking will cause the fish to fall apart.
- Having stood for 10 minutes under a closed lid, the river carp soup is ready for tasting.
Serving methods and serving rules
The ear turned out to be tasty, satisfying, fragrant and very rich. Homemade soup is just as tasty as in the cauldron. It goes well with rye bread, croutons and crackers from black rolls. Fans of this soup also recommend serving fish kulebyaki, pies with a screech, pies and rice with eggs. It is not a shame to set a table of this scale even for a holiday for guests.
The first dish is served in deep plates, which are placed on the console (flat). To the right of the dishes is a tablespoon soup spoon. Since there is fish meat in the ear, you also need to put a knife and a fork. Be sure to put on a table a special stand for napkins filled with them. Or offer paper towels to the participants.
