Step cooking
- Place a frying pan on the stove for heating and pour vegetable oil (4-5 tablespoons) into it. Pork meat (steak about 600 grams) cut into large pieces, a thickness of not more than 1 cm.
- Salt the meat on both sides with a pinch of salt and sprinkle, also on both sides, freshly ground black pepper.
- Put the pieces of steak in the heated oil and fry them over high heat on each side for 4-5 minutes. You do not need to keep the meat in the pan longer, otherwise it will become dry and stiff.
- Peel the onion (1 large onion or 250 grams) and cut into half rings of medium thickness.
- Cut the pumpkin (0.5 kg) into cubes about 2 cm wide and 4-5 cm long.
- After 4-5 minutes, turn the meat over with the shovel or cooking tongs on the other side and fry for another 4-5 minutes.
- Peel the potatoes (4 large tubers) and cut them in the same way as a pumpkin in small pieces of 4-5 cm long and up to 2 cm wide.
- Remove the fried meat from the pan with cooking tongs in a plate, and in the pan, in the fat remaining after roasting the meat, put the chopped pumpkin and potatoes. Try not to stir the vegetables with a spatula, but mix by shaking the pan and tossing the vegetables slightly. Do this every 2-3 minutes. In total, cook potatoes with pumpkin for 10 minutes.
- After 10 minutes, salt the vegetables with the remaining salt, add spices: paprika (1 teaspoon) and dried garlic (1/2 teaspoon).
- On top, lay out the disassembled half rings of the onion and stir again, gently tossing up the contents of the pan. If this does not work out for you, then gently mix with a spatula with movements from the bottom up. Turn the heat to a minimum, cover the pan and cook the vegetables for about 10 minutes. Stir by shaking the pan so that nothing sticks.
- After 10 minutes, add the previously fried pieces of meat to the vegetables, and cover with a lid. If juice has leaked from the meat onto the plate, then add it to the pan too. Stew vegetables with meat for another 5 minutes.
- Remove the cooked roast from the stove.
Options for serving and decorating dishes
Appetizing hot fries carefully, in order not to break the sticks of potato and pumpkin, place on serving plates (2-3). Top the dish with freshly ground black pepper and garnish with finely chopped fresh dill. Separately, for the roast, you can serve a salad of fresh vegetables in season, seasoned with olive oil and lemon juice.
