Step cooking
- First 2 eggs are broken into a medium-sized bowl. It is desirable that it be narrow and high, so the egg will be better to beat.
- The eggs are beaten with a mixer until a thick foam is formed. In time, it is about 3 minutes at high speed.
- Without turning off the mixer, 350 grams of sugar are added to the same container. If the cottage cheese used later is sour, it is worth adding more. Pour sugar several times so that its grains from each serving are almost completely dissolved in the beaten egg.
- Now 150 grams of melted and cooled butter is poured into the bowl. After this, the mixture is again thoroughly mixed by means of a mixer for 3-4 minutes until a homogeneous mass.
- 250 grams of cottage cheese is placed in a bowl with whipped ingredients and again the ingredients in the bowl are smashed with a mixer to a homogeneous mass.
- Next, about 1/3 of the harvested amount of flour is added to the bowl.
- 1/2 teaspoon of soda is poured into a glass, and approximately 3-4 teaspoons of vinegar are added to extinguish it.
- Then the mixture is stirred with a spoon and poured into whipped dough.
- Now the mass in the bowl is thoroughly mixed again. First, at medium speed, and then at high, in general, 2-3 minutes.
- The dough from the middle bowl is transferred to a volumetric bowl with a spatula. 6 more tablespoons of flour are added to the bowl. The total amount of added flour largely depends on the density of the curd, which determines the consistency of the dough. If it is more dense, less flour will be needed.
- Next, the contents of the bowl are mixed a little with a spatula, and after that the mass is again whipped with a mixer. As a result, the consistency should be a little thicker than sour cream.
- Raisins are added last to the dough, a little less than half the standard bowl. Next, you need to stir it so that it is distributed throughout the volume.
- Before pouring the dough, the cake pan is greased with vegetable oil over the entire inner surface using a cooking brush.
- The dough from the bowl with the help of a spatula is transferred to the mold and leveled. Next, he needs to let stand for 5 minutes.
- At this time, the oven starts to heat up at a temperature of 200 ° C. Five minutes later, the dough pan moves to the oven. In this case, you need to lower the temperature to 160 ° C. Baking a cupcake will be approximately 40-60 minutes, a lot depends on the particular oven. You can check the readiness of baking by piercing it with a toothpick. If it is clean and dry, you can pull it out. At the end of the baking period, it remains to get the mold out of the oven, and, turning it over, remove the cupcake from it. This completes the cooking process, bon appetit.
