Step cooking
Kneading dough
- For the test, combine 350 grams of flour, 1/2 teaspoon of salt and 2 teaspoons of baking powder in a bowl. Stir thoroughly so that the salt and baking powder are evenly distributed in the flour.
- Take 200 grams of cold butter and grate it coarsely directly into the flour. Stir it from time to time with your hands so that the flour covers the butter.
- Add 500 grams of cottage cheese to a bowl of butter and flour and knead the dough with your hands. It is not necessary to grind cottage cheese through a sieve. The amount of flour depends on the fat content and humidity of the cottage cheese. The wetter it is, the more flour is needed. If you think the dough is too sticky, add some more flour to it.
- Put the dough on a lightly floured table or kitchen board. Keep kneading it. It should become slightly sticky, but keep in shape. You can check the readiness in this way: tear off a small piece from the dough, if it comes off, but does not stretch, then the dough is ready.
- Form a ball of dough and sprinkle it with a little flour. Wrap it in cling film or bag and refrigerate for 1 hour. It should freeze and not stick to your hands.
Bagel formation
- After cooling, lay the dough on a table sprinkled with flour. Divide it into 4 equal parts.
- Roll out each piece with a rolling pin in an even circle.
- Sprinkle it with a mixture of 25 grams of sugar, vanilla sugar and cinnamon (spices can be varied to your taste). If you bake such bagels again, their taste can be varied with various fillings. Add at this stage, along with sugar, also additional cottage cheese, apples, dried fruits or jam. You can experiment endlessly, since the dough is quite basic.
- Using a knife or a plastic spatula (you can also use a pizza knife), divide the dough circle into equal triangles. They should turn out about 12 pieces.
- Each triangle from a wide edge to a narrow roll into bagels.
- Put bagels on a baking sheet covered with parchment.
- Send them to the oven, preheated to 180 degrees for 20-25 minutes. Bagels should grow a little and turn yellow, but they will not cover with a golden crust, since there is no sugar in the dough.
- Sprinkle the finished, still warm bagels with icing sugar.
