Step cooking
- Take a clean, deep bowl and pour 120 grams of white sugar into it. When using a sweetener (like stevia) diluted in water, you may get a completely different taste different from what you get using regular sugar.
- Add two eggs to sugar and beat well with a blender.
- Pour 2 grams of vanillin and a pinch of salt to the eggs with sugar. Shuffle.
- Add cottage cheese of any fat content and beat the mixture with a blender until a homogeneous mass is obtained. Calcium is better absorbed from cottage cheese with a higher fat content, therefore, in terms of usefulness, we suggest giving preference to it, but if you replace it with 0%, this will not change the taste.
- On a coarse grater, grate the chilled butter and pour it into the curd mass. If you use high-quality oil, and not margarine, the pastries will turn out more delicate in taste and pleasant in aroma.
- Mix wheat flour with baking powder. Sifting through a sieve, introduce in small portions into the dough, periodically mixing the contents of the bowl.
- Knead the dough first with a spatula, and then with your hands. It should turn out plastic, soft and not stick to your hands. The amount of flour needed will depend on the moisture content of the cottage cheese you have chosen.
- Transfer the dough into a clean, deep bowl, cover with cling film or a lid and store in a cold place for 1 hour. It is not necessary to put it in the refrigerator, in winter you can just leave it on the balcony.
- Divide the chilled dough into three equal parts.
- Remove two of them into the cold, and roll out the third with a rolling pin into the formation. The thickness of the rolled dough should not be more than 5 mm.
- Cut circles with a diameter of 5-7 cm on it. For this, you can use a glass or cup.
- Lay them one on the other lap.
- Gently roll and cut in half. The dough is quite plastic, and it will not be difficult to do this.
- Preheat the oven to 180 degrees and place baking paper on a baking sheet. Form the resulting halves of the rolls in roses and lay them on paper. Place the cookie sheet in the oven for half an hour.
- Ready cookies should cool slightly. Garnish it with powdered sugar. With the remaining dough, you can do steps 9-13 or leave it the next day so that the pastries are fresh. This, respectively, will take another 40 minutes per batch and will be about 80 pieces in total.
