- Fat cottage cheese - 600 g
- Large chicken egg - 1 pc.
- Semolina - 50 g
- Sugar - 1-2 tbsp. l
- Salt - 0.5 tsp.
- Lemon - 1 pc.
- Vanilla Sugar - 8 g
- Raisins - 40 g
- Ghee - 15-20 g
- Wheat flour - 50-60 g
Step cooking
- Put in cheesecloth, folded in 3-4 layers, 600 grams of fat cottage cheese. The product can be taken of any fat content of your choice. Use of low-fat cottage cheese for cooking is not recommended. Squeeze the ingredient out of excess moisture as much as possible. It is better to take a homogeneous product, not granular structure and not dry.
- Put the squeezed cottage cheese in a deep bowl, add 0.5 teaspoon of table salt and 1-2 tablespoons of sugar, adjust the amount of sugar depending on how acidic the product is and to your liking.
- Beat in a bowl 1 large chicken egg, put 50 grams of semolina.
- Knead the mass to prepare cheese cakes with your hands for 4-5 minutes until the mixture is completely homogenized. Cover the bowl and let the curd paste infuse for 10-15 minutes to swell the semolina.
- Remove the zest from one pre-washed lemon with a grater, put the zest in the mass. When removing zest from citrus, try not to touch the white subcortex, which gives bitterness.
- Put in a bowl 40 grams of raisins and 8 grams of vanilla sugar (replaced by vanilla, vanilla essence). Mix well. Sort raisins in advance and rinse.
- Sprinkle a large tray or flat plate with wheat flour (50-60 grams). Gather a spoonfuls of the mass, weighing about 50-60 grams each, lay on a tray.
- From each portion of the curd mass, form balls, roll them in flour.
- Using a culinary spatula, give the workpieces the shape of cakes 2-2.5 cm high, pressing them from above and from the sides. Do this with all the blanks.
- In a preheated pan, put 15-20 grams of melted butter. Fry the cheesecakes until light golden brown, about 2-3 minutes on each side on a fire less than average. After frying the other side, reduce the heat to a minimum, hold the cheesecakes in a pan for another 1 minute. For frying, it is better to use a pan with a non-stick (or ceramic) coating or a cast-iron pan.
- Put the fried cheesecakes into a baking dish, cover with foil on top. Bake in an oven heated to 180 ° C for 10-12 minutes. Serve syrniki with sour cream, whipped cream, fruits, berries, jam, jam, melted chocolate, other additives.
