Step cooking
- Cut the rabbit into small portions - legs, brisket, back. Wash thoroughly.
- Put the chopped pieces of meat in a pan and pour 3-4 liters of water. The volume depends on the width of the pan, maybe 2 liters is enough for you if the pan is narrow and the water will cover all the meat. Add a sprig of parsley to the pan, and when the water boils - salt to taste. Do not forget to remove the foam! Cook until cooked. Keep in mind that rabbit meat cooks pretty quickly. 30 minutes will be enough for you to get the meat to the desired condition. If everything is ready, put the meat from the broth in a bowl, and strain the broth through a sieve.
- In a pan with a wide, thick and flat bottom (if not, just in a deep frying pan), heat the vegetable oil. Peel and chop the onion into large cubes. Pour the onion into the pan (pan) and fry over medium heat until half cooked.
- Add your favorite spices to the onion, you can do with one black ground pepper and paprika.
- When the onion becomes soft, lay the rabbit meat on top of it. Fry the meat on both sides.
- If you fried onions and meat in a pan, transfer everything to a cauldron / pan with a thick bottom. If you used the pan initially, skip this step. Peel the potatoes and cut them coarsely, for example into quarters. Put on top of the meat.
- Pour the broth into the pan so that it covers the potatoes. If the broth is not enough, add water.
- Add salt and add black pepper to taste. Simmer the rabbit on low heat for about 20 minutes. 5 minutes before cooking, peel the pepper and cut into strips. Add to broth. Close the lid and simmer further.
- At the end, add coarsely chopped parsley. Set the pan aside and close the lid. Let it brew for 5-10 minutes.
