Step cooking
Product Preparation
- We wash the rabbit carcass under running water and dry it with paper towels, cut it into arbitrary portioned pieces.
- Take 1 onion, 2 cloves of garlic and 1 carrot, rinse them thoroughly and remove all excess parts. Cut the onions and carrots into small cubes, and crush the garlic with a knife so that it gives more aromatic oils.
- We also wash the middle tomato, and then remove the peel, leaving only a soft core.
Cooking process
- In a heat-resistant pan, heat 2 tbsp. l olive oil (can be replaced with vegetable oil) and put into it pieces of rabbit meat, thoroughly boned in flour.
- Fry the meat until golden brown for 7-10 minutes, periodically turning and stirring. Then take them out on a separate plate.
- We send chopped vegetables to the same pot: onions, garlic and carrots. Add salt, pepper to taste and add a drop of olive oil. Fry a couple of minutes until the onions are soft.
- Add meat to vegetables and mix the ingredients.
- Pour 100 ml of white wine, and also introduce tomato sauce and tomato pulp. Mix everything thoroughly again.
- After a couple of minutes of stewing, add 2-3 branches of thyme and 5-6 olives to the pan for a more piquant taste and aroma.
- Pour all the ingredients with water so that it covers them 1-2 cm.
- Stew for 15-20 minutes until tender.
- We serve the rabbit with vegetables as a separate dish, water it abundantly with the resulting sauce, decorate with olives, pine nuts and parsley.
