Step cooking
- Peel the onion (1 piece) and cut it into small cubes.
- Peel and chop the garlic (4-5 cloves) very finely or pass through a garlic press.
- Defrost squid carcasses (2 pieces) and put in a deep bowl. Pour the squid with freshly boiled water (boiling water) so that the film and skins are well removed from them. Keep squids in boiling water for no more than 1 minute.
- Then rinse the squid in cold water and remove any excess film.
- Cut the squid carcasses into thin rings.
- Place the pan on the stove and heat. Pour in any vegetable oil of your choice (1 tablespoon). You can also use butter (1 tablespoon). Put the chopped onion and garlic in the heated oil and fry them until golden, stirring occasionally with a spatula.
- When the onions and garlic are sufficiently fried, pour the tomato sauce (250 ml) into the pan. It is better to use your homemade summer preparations, but you can use the store one.
- Add salt, pepper and Provence herbs to the pan, focusing on your taste. You can also add dried or fresh finely chopped parsley or dill. Stew tomato sauce with onions for 5-7 minutes until the onions are completely soft.
- When the sauce is ready, put squid sliced in rings into it and mix gently so that each ring is covered with sauce.
- Stew squid rings in tomato sauce for no more than 3 minutes. The longer you cook the squid, the more “rubber” its meat will become. The whole secret of cooking delicious squids is to reduce the time it takes to heat them.
Decoration methods and serving options
Stewed squid in tomato sauce is a wonderful sauce for any side dish: rice, pasta, any shape and configuration, and even boiled potatoes. The dish can be decorated with a sprig of fresh herbs or a ring of lemon. A good addition to the dish is slicing fresh vegetables or a salad of cabbage and cucumbers, radishes, daikon and carrots, seasoned with lemon juice and olive oil.
