Step cooking
- Well wash vegetables and greens under running water. We clean the zucchini and cut it into small cubes. Young zucchini with thin skin can not be cleaned. You can increase the number of zucchini if you cook for several people.
- Divide the tomatoes into 4 parts and cut into small pieces. If you don’t like the skin on tomatoes, then you can remove it beforehand by pouring boiling water over them. For this dish, it is better to take juicy varieties of tomatoes.
- Finely chop the greens. You can take both parsley and dill to your liking.
- Rub the garlic on a fine grater. You can also grind using a special press.
- We put a frying pan on a stove over medium heat. Pour some vegetable oil. You can use olive, sunflower or any other oil to your liking. Pour the chopped cubes of zucchini into a skillet and fry for about a minute, stirring with a spatula. Do not cover with a lid.
- Add chopped tomatoes, continue to fry, stirring, until the zucchini becomes soft. It takes approximately 7-8 minutes.
- Salt and pepper to taste. Add chopped garlic, mix and simmer another 2 minutes.
- Pour the finished stewed zucchini onto a plate, decorate with chopped herbs and serve. Enjoy your meal!
